I've made the butternut squash soup and the chicken curry w peppers and cabbage (minus the cabbage, LOL) from this site. Both were delicious - and I don't even like curry usually....

Easy mi soto (Indonesian chicken noodle soup):
4 chicken drumsticks/breasts
2 carrots, chopped
1 cinnamon stick
1 tsp chinese 5 spice powder
1 tsp ground ginger
3 garlic cloves, crushed
1 dried chilli, crushed (alternatively, use dried chilli flakes)
1 chopped onion
6 cloves
6 cups chicken stock (I use chicken stock cubes)
broccoli
Put everything in crockpot and turn on. 1 hour before serving add broccoli.
Have with noodles/pasta.
Optional chilli soy sauce condiment to go with it:
Bird's eye chillies (as many as you'd like)
equal amounts kicap manis (Indonesian sweet soy sauce) and regular soy sauce
Garlic (as much as you'd like)
Blend all ingredients together and dollop on the chicken noodle soup.0 -
I make a super healthy vegan soup with chicken broth, beans (anyn kind will work, I used canned navy beans, rinsed and drained last time, but black beans or red beans work great), almost any kind of diced up veggie is great in there (I last used zucchini, green beans, onions, tomato, and red bell pepper). To add something to it I will toss in diced up tofu, brown rice, white rice, orzo, quinoa... whatever you're feeling. It's SO good for you. Any kind of seasoning works--I've done a curry flavored version, sometimes I'll use a more mexican mix of spices, usually use garlic.
If it contains chicken broth, it isn't vegan. Sorry for being pedantic, but that's what I'm like.

love the ideas! i rely on my crockpot a lot because i work 10 hours a day and have two kids that are just as hungry as i am by the time we get home. nothing better than walking in and serving up our plates.
I don't know if many of you use it but pinterest is a great help for me with recipes. they have a lot in the health and fitness catagory but also in the food and drink.0 -

We use "Fix-it and Forget-It Lightly" for a lot of our crock pot cooking. I'm making Healthy Chicken from the book for supper tonight...3.5 lb whole chicken cut up in pieces, coat it with skim milk and finely crushed corn or rice cereal, salt and pepper, then cook on high for 3.5-4 hrs.0

I make Scalloped Potatoes in mine all the time. It is supposed to serve 12
- 1 cup sour cream
- black pepper (to taste)
- 1 can condensed cream of potato soup
- 1 tbsp Worcestershire sauce
- 2 lb small red potatoes
- 1.5 cups shredded cheddar cheese or cheese blend
- 1/2 pound of meat (optional)
Grease/Pam the crock well. Mix soup, pepper, Worcestershire sauce, and sour cream together in a bowl until well blended. I'm more of a one bowl kind of girl so I just dump everything in the crock-pot at once and give it a good stir instead of layering it. Cook on high for 3-4 hours, low 7-8 hours or until the potatoes are done.
I can't give you the calorie count because I just don't know it. I use low sodium, low fat everything and it comes out fantastic. It is very easy to adjust for the number of people being served. This is DH's favorite meal so we tend to have it rather often, with a package of cubed ham added in. Sometimes I toss in ring bologna or crisp bacon. Served with a nice side salad this makes a complete meal.0 -
