    Turkey tenderloin in parchment...crock-pot style

    Season turkey tenderloin as you prefer.. . I enjoy soaking in buttermilk overnight with paprika, red pepper flakes, rosemary. Discard of soak.
    Wrap in piece do parchment, seam side up and tied on the sides ( I use floss)
    Lay flat on bottom of crockpot and cook on low 4 hours. Enjoy.

    Super super easy and yummy Crock Pot Chicken Bacon Ranch

    4 boneless, skinless chicken breasts
    4 Tbsp real bacon bits
    1 tsp minced garlic
    1 package dry ranch seasoning
    1 can cream of chicken soup
    1 cup sour cream
    Preferred noodles

    1. Place chicken in greased 5-6 quart slow cooker.
    2.Combine bacon, garlic, ranch seasoning, soup, and sour cream; Mix well.
    3.Pour over chicken in the crock pot. Cook on high for 3-4 hours.
    4.Shred the chicken using 2 forks.
    5.Serve over cooked noodles.

    The Crock Pot Santa Fe Chicken is particularly good and I prep it ahead of time and throw it in the freezer - then when I want to have it I just defrost and throw the contents in the crockpot! Easy Peasy!! :) One note though - if you are away from home a long time I would recommend substituting chicken thighs for chicken breast - the breast really dries out - even being submerged in liquid! And the calorie difference is negligible (less than 40 calories per serving of chicken).

    I make a lot of Indian and Thai curries in the crock pot! Between that and the rice cooker, it's a no work necessary meal! Also, vegetarian chili, veg soups and stews, mac and cheese and more. You'll find tons of recipes online if you just google it.

  • I haven't read all the replies, and I assume it is in there already, but check out skinnytaste.com!! There are SO many yummy and healthy crockpot recipes, with nutritional info already calculated. I LOVE the chicken taco chili, turkey 3 bean chili (in my crockpot for dinner tonight!!), and cuban picadillo, to name a few. The soups - broccoli potato, stuffed pepper, loaded baked potato are really good too!!

    I have one night a week where I prep loads of veg for crockpot meals then freeze it in bags so I just need to throw a bag in the crockpot in the morning and come home to yummy food. It means I can buy veg in bulk and makes weekdays far easier (I work long hours).

    I bought a timer if the meal needs fewer hours than I'm at work for. I use my crockpot most days.



    What kind of timer? I need something like this!
