    Hot smoked salmon with beetroot, cucumber, tomatoes and spiked yogurt.

    I have the same thing for lunch today with the addition of some bocconcini.

    Zucchini and bell pepper pasta with a little spaghetti sauce, garlic, and parmesan cheese, with cottage cheese on the side. Mixed about half the cottage cheese in with dinner and didn't eat the other half. REALLY tasty.

    And some experimental sushi with the cauliflower rice, it was pretty dang tasty and only about 25cal per roll!

    Dinner tonight! Two thin sliced chicken breasts with steamed green beans and this vegetable concoction I made up! I dunno what to call it, but man it's tasty! It has a consistency that reminds me of curry but no curry spice involved! Just whatever veggies I want, sauteed, then half a cup or so of chicken broth mixed with two Laughing Cow cheese wedges and simmer until thickened!

    Tonight's mix is english peas, red potato, onion, red bell pepper, tomatoes, and this 'chefs blend' mix of mushroom I got from the store -- contains enoki, 2 kinds of shimeji, hen-of-the-woods, etc. =d So good!
