chicken breasts with Rotel diced tomatoes and brown rice! Super easy- brown chicken with a little s&p, dump a can of Rotel tomatoes in pan, cover and simmer til chicken breasts cooked through- about 20 minutes. I usually serve with a side of brown rice, and if I'm feeling a little cheaty, I'll top with a little low-fat shredded cheese :-) Oh, and a side of spinach.0

I'm on a low-calorie day of the 5:2 method. I'll sautee a lot of veggies with nonstick spray and throw them in chicken noodle soup from the can. (Last checked, my BP was 90/51- sodium is not a problem for me!) Bedtime snack will be 8 oz. nonfat Greek yogurt with honey and blueberries, and a glass of white wine.0

Tonight I need to make something quick that I can heat up in a hurry for dinner, so I'm having:
1 serv (3) - Jennie-O Turkey Homestyle Meatballs - frozen (180 cal)
1.5 cup long raw green beans (66 cal)
1 cup cubed butternut squash (40 cal)
1 cup raw mushrooms (15 cal)
I throw it all in a bowl, add a little water, put in microwave for 6 mintues, season with a lil spices. YUM! You can add way more veggies if you want, this satisfies me really good.
And I haaaave to have dessert..
1/2 cup Blackberries - Raw (30 cal) (or whatever fruit, I've tried granny smith apples, bananas, rasberries)
1/2 cup Carb Balance Vanilla Ice Cream (100 calories)
I warm the berries/fruit in the mirowave and put them over the ice cream.0
