    Spaghetti squash with Black Bean and Corn Salsa. I was surprised how good it was and will make twice as much next time.

    Is there a recipe for this?

    Stuffed poblano peppers.

    They're much more fragrant and spicy than the standard bell. Mmm so good. I've had them at Mexican restaurants but had never attempted them at home. I'll be buying these from now on!

    It's not really a basic food, but I discovered Healthy Life bread this week...I usually never buy white bread, but this was only 35 cals and 8 carbs per slice! With lots of protein and fiber....couldn't resist. And it tastes good too. Now I can feel great about my pb&j :)

    Well this isn't new but a refind since I haven't had it in so long. Tabouleh. Oh how I love it. 1 cup is less then 100 calories and its so refreshing.

    Burger by Amylu Sweet Caramelized Onion Chicken Burgers made with red bell peppers and gouda (gouda is gooda) cheese! So amazing. Got them at Costco, 140 cals per patty (thick patty), 560 sodium (which I don't think is bad for something like this) and I can pronounce everything in it! Soooo good!! They come 10 to a box 4 packed with 2 pattys and 2 packed by them selves. You can freeze them in the air tight back and everything. Loving these things!!! Great on the sandwich thin

    Wow!! So I've had jicama before...but never purchased it!

    Its low in carbs but really really high in potassium, which is GREAT for my sodium addiction!

    From what I've read, you should have double the potassium that you have sodium!

    That means I can have 4 jicama a day as snacks, it only takes up 190 calories (depending on the size) but that would total 2800mg of potassium! Now...to keep my sodium at 1400 is the dilemma! LOL

    Its sooo yummy with lime and chili or salt! Wait-NO SALT!

    Peanut Butter & Co. makes some wonderful peanut butters. I have mentioned the White Chocolate Wonderful and the Dark Chocolate Dreams but I just discovered that they have a Cinnamon Raisin Swirl!!! It's the yummiest ever and less calories than the others too!

    I'm back with another Amylu find. I love these products. I just got the Apple & Gouda Cheese Chicken Sausage. So good. I cute it up and heat it in the skillet and it tasted like a real sausage. I think we will BBQ them for dinner some night soon and I bet the will fill the void of a real size dog. I like the Hebrew National hot dogs, but they are so skinny. I may actually try to pass it by my dad and see if he likes it.

    My new favorite things to eat:

    Grilled Artichokes with EVOO, garlic salt and pepper--no need to dip into sauces! and I finally learned to prepare and eat a fresh artichoke ;)

    Cottage cheese with a fruit butter (I use blueberry, peach or raspberry butter from my farmers market)

    Sprouted 7-grain bread from Trader Joe's--very yummy and filling :)

    Brocolli sprouts--something new I found at the farmers market and love them

    Chipotle cheese from the farmers market--I try to keep the serving to 1oz or less but I love the spicy zing it has/adds to my sandwiches

    String cheese! I would have never had tried it if it wasn't for MFP. I eat it with almonds for a snack. Mmmmm. :happy:

    mmmmm I love couscous but it's a weakness of mine so i don't make it often. I can easily eat 3 servings without realizing it.

    My new love this week is marzetti's spicy chipotle hummus and carrots.

    Its sooo simple!

    You can use 95% ground pork or 99% ground turkey (much leaner!).

    For every 4-5 oz, I add 1/4 tsp ground marjoram, 1/4 tsp ground sage, fresh cracked pepper and a bit of salt. I usually make about a lb of it and bag it in 4-5oz servings. I make the patties about an ounce each (they fit PERFECTLY on mini bagels for homemade McD's sandwiches!) I sautee them (very little extra light olive oil or cooking spray for about 1 minute on each side).

    The longer they marinate, the more flavor you get without having to add salt.

    Basically, the only calories/fat in it is from the meat! Everything else is essentially free!

    Thanks Karma - i just emailed that to myself. Kind of an eye openener since I never really thought 'hey, i can make sausage patties simply'.....but after reading your method I totally got that NO DUH moment. its really only seasonings and ground meat, the only thing complicated would be a sausage casing...but patties are better anyway!

    I love them!!! So much better than greasy ones! They have a tendency to dry out if cooked too long; might take a couple tries :wink: . Basically, they cook quicker than you think they're done! :noway:

    Twice baked potatoes. Okay, so it's not the healthiest (and honestly, it was the first white potato I've had in probably 5 or 6 months!!!) but I'd never had one until last night at my bf & my anniversary dinner. I'm in love.

    Just tried Quinoa last night for dinner --cooked it with vegie broth as suggested for extra flavor and I LOVED it..picky eater husband also liked it :happy:

    I also want to roast some brussel sprouts...never had them!

    Roast brussel sprouts is my new favorite side! I use one of the small frozen packages, sprinkle with a lil EVOO, salt, pepper, minced garlic, and lemon juice. Then place in the oven at 375 for about 15-20 minutes! YUMMY!!!!

    So maybe not AMAZING, but I bought some flax seed in bulk so I can add 1 tbsp to my "cereal" concoction. Flax seed is very healthy! And CHEAP!
