Must be a Mexican type of day, ME TOO! I've decided to get chicken fajitas with no tortillas and go easy on the guac,sour cream and cheese.....at my favorite place that has $2 Corona Lights on Fridays...so inevitably 3 or 4 of those too.0

hmmm i have a few choices of weight watcher meals lol so not made up my mind just yet but it will be washed down with loads of vodkas and diet cokes i love a Friday night session :drinker: hope you all enjoy your meal and drinks :happy:0

PIZZA!!! My wife and I just finished up the Whole30 Program, so what better way to celebrate than by blowing it all in one meal, right?? I won't eat that much, though... I don't wanna' end up shocking my system too much after this 30 day "detox".0

A whole fresh mackeral, im gonna stuff it with lime, chilli and ginger. Not sure what I'm gonna have with it yet. Maybe some nice roast veg, or homemade sweet potato wedges.0

Going out to Olive Garden with my husband and another couple and I'm looking forward to it! I'll prob order from the Lighter Fare on the menu and share the yummy zeppoli dessert with my hubby. I'll have a light lunch and work out to earn the extra calories :drinker:0

Tilapia for me:) Just not sure which route I'll take it yet. Zucchini, Capers, Lemon and tomatoes or simmered in an indian spiced tomato sauce over rice. Still have time to decide...0

For me, boneless chicken thighs in a bourbon mustard sauce, roasted garlic mashed potatoes and steamed asparagus.
Please share the recipe. Sounds yummy.0 -
Tahini Hummus Chicken Thighs
Note: I recommend preparing this the night before or morning of cooking so the chicken has time to marinade.
Ingredients:
1.5-2 pounds boneless skinless chicken thighs
1 large lemon – zest and juice
4 oz Joseph’s roasted red pepper hummus (1/2 small container)
3 Tbsp brown sugar
6 Tbsp water
1 tsp dried thyme
½ tsp ground black pepper
½ tsp red pepper flakes
3 cloves garlic, minced
Directions:
Line baking dish (I use 9x13”) with tinfoil and place chicken thighs evenly in dish.
Zest lemon into small mixing bowl, half lemon, remove visible seeds and squeeze juice into same bowl. Add hummus and mix. Add remaining ingredients and mix thoroughly.
Spoon mixture over chicken thighs and put in fridge to marinate.
When ready, bake at 400 F for 35-40 minutes. Also works great on the grill.0 -

I still haven't decided my dinner yet. Probably either a salmon fillet with rice or a turkey sandwich with whole wheat bread. It depends on how much effort I feel like putting into dinner after work.0 -
