    great combinations :) thanks for all the ideas.
    not in a jar but my favourite salad combo is...

    1 Tbsp balsamic
    1-2 tsp sriracha
    roasted/grilled veggies - carrots, red onion, peppers, zucchini and brussel sprouts
    1/2 cup curried couscous (cooked with hot curry powder)
    10-15 cherry tomatoes, halved
    2-3 cups spinach

    OMG this sounds so good. I would never have thought to combine balsamic and sriracha, but it sounds intriguing. And the roasted veggies...drool.

    I saw this on Pintrest and actually tried it....I loved it because I can make a salad for each day of the week and they stay fresh!!

    Bahahah!

    Sometimes if I'm just doing one beet, I will use the cheese grater. If I'm doing two or more, I whip out the food processor. Totally worth it to contain the beets.

    Also, if you're worried about the coloring, you could try a beet that is less 'beety'... its called a chiogga beet and has a cool candy cane/bullseye pattern. http://www.thekitchn.com/ingredient-spotlight-chioggia-109155

  • This reminds me of the salads in a cup that they had at McDonald's. Those things were pretty tasty! I never could quite remember the name, so I just resorted to ordering a "Salad McHooHah" and they always knew what I meant. :-D

    I just bought my jars. I could not find wide mouth, but I think I will be OK with regular quart jars.

    I'd just get something like the lock&lock bowls so I can reuse them, like the jars, and not break them, like the jars. :laugh: I enjoy my toss-it-all-in-and-shake lunches for work. Being able to reseal it for later is a plus too since there is no such thing as an uninterrupted planning period.

    I'm gonna try this for sure. Dumb question though after you shake it do you eat in out of the jar or put it in a separate container to eat it? Seems jar may be a little difficult to eat out of.
