Finally Made the Diet Soda Cupcakes!!

I finally made the cupcake recipe that I saw on the forum. I used.

1 Box of Orange Supreme Cake Mix
1 Can of Diet Orange Soda
2 Egg Whites
Cool Whip Vanilla Frosting

You just blend all of these ingredients together and bake as cupcakes. You leave out the whole eggs, oil, and water it calls for. I could not even tell the difference. I am going to use this recipe for when I make birthday cupcakes/cake now! This was definitely one of the best recipes on here!

Just be careful with cooking with aspartame, I read it breaks down into nasty stuff. Use sodas sweetened with Splenda (sucralose)

not to sound like a nerd - it's late and i'm sleepy haha - list all the ingredients above...then...1st instruction says "you just blend all of the ingredients...."
...does this INCLUDE the coolwhip vanilla frosting - or is the frosting for later/on top?

I am assuming the cool whip is for the top? I have never heard of cool whip vanilla frosting...do you make it with cool whip or is it something you buy? If so, is it in with the cool whip or in the frosting isle? Thank you for sharing...definitely gonna try this one!

Great for anyone with an egg allergy.

Very dense and a great way to use up the extra pumpkin puree from Turkey day.

I was like "soda cupcakes" ewww. but i suppose the orange soda would be good.. was expecting coke or pepsi... something like that which wouldn't be good i would think.

I made the diet soda cupcakes tonight, but I used a can of cherry coke zero (because we already had it) and spice cake. I topped it off with the lite cool whip and it smells like I'm baking for Thanksgiving in here. They turned out excellent - I agree with the other posters, you can't even tell the difference. My kids (3 and 6) ate one and wanted more!

I'm not very culinary savvy but can you use that mix to make muffins instead of cupcakes? Because it sounds like it would be really good if you added some blueberries to this or something like that instead of frosting/whip.

I took a made from scratch recipie and added diet coke instead of butter and milk and it turned out ok and i added chocolate chips instead of icing.

Sounds yummy

Funfetti cake mix with a can of Diet Sprite or Sprite Zero is yummy, as is white cake mix with diet orange. I've made both kinds, as well as chocolate cake with Diet Cherry Coke, without adding egg whites. They need a little more time to cook, but they are good! Especially with fat-free whipped topping as icing! Yummy!
