    Breakfast was a killer roasted veg omelet with eggplant, brussel sprouts, carrots, onion, peppers and some fresh spinach and grape tomatoes. Nicely burned to taste. Topped with nutritional yeast, more sriracha and pico. Killer.

    Dinner was deconstructed tacos - White fish dredged in cornmeal and spices, Korean slaw, spinach, pico, soft corn tortilla, and some tangy sour cream (not in the photo, added later).

    My lunches the past two days: fried eggs with halloumi and mexican-style rice & beans (and peppers and corn) and a Chobani strawberry yoghurt.

    Steak and caesar salad with avocado. I made croutons out of Persian olive oil bread.

    Pork loin with salad and asparagus.

    I cooked the asparagus in coconut oil then drizzled it with the left over salad dressing. Yum.

    I baked these last night: Protein Pumpkin Cinnamon Rolls (top) & Upside-down Pineapple Strawberry Protein Cakes (bottom)

    Please, please share your protein recipes! I'm always after delicious ways to up my protein content!

    For anyone that wanted the recipes!!

    Top picture: Pumpkin Cinnamon Rolls
    Yields 4 Rolls
    Each Roll: 97 Calories | Protein 10 g | Carbs 9 g | Fat 3 g

    Roll Batter:
    ¼ c. canned pumpkin (pure pumpkin – not pie filling)
    1 scoop Vanilla Whey protein powder
    2 tsp Mccormick Pumpkin Pie Spice
    2 tbsp coconut flour
    1/3 c. egg whites
    ½ tsp baking powder
    Glaze:
    ¼ c. sugar free maple syrup
    2 tsp. almond butter, smooth
    Dash of cinnamon
    1. Preheat oven to 375 degrees.
    2. In a bowl, mix all ingredients for the roll batter.
    3. Spoon into a cupcake pan that has been sprayed with non-sticking cooking spray. You should end up with four rolls.
    4. Place in oven and bake for about 10 minutes. Then, using a fork or knife, loosen the rolls from the pan and flip them over. Continue cooking the rolls for about 2-5 minutes. The rolls are cooked when you can insert a toothpick into the center of the rolls and it comes out clean (no batter on the toothpick). Be careful not to overcook.
    5. Remove from oven, and allow the rolls to cool slightly.
    6. Microwave the glaze ingredients for about 15-20 seconds. Remove from microwave and stir well.
    7. Dip both sides of the rolls in the glaze mixture, set on a rack or plate to cool and sprinkle with cinnamon.


    Bottom: Strawberry Pineapple Upside-down Protein Cake

    ½ scoop vanilla whey protein powder
    3 Tbsp coconut flour
    1 Tbsp whole wheat flour
    ¼ cup nonfat vanilla greek yogurt
    ½ cup egg whites
    1 tsp vanilla extract
    ½ tsp butterscotch (or) rum extract
    2 Tbsp Stevia
    ½ tsp baking soda
    1/8 tsp salt
    6 strawberries (diced)
    4 chunks of pineapple

    Spray 4 muffin tins with cooking spray, divide the diced fruit between the 4 tins. Pour batter over these 4 fruit filled muffin tins and bake at 325 for about 15minutes or until cooked through
    Nutrition per cake: 87 Calories, 11g carbs, 1g fat, 8g protein

    i juiced, green apple, kale, celery, cucumber, lemon, and ginger root... then blended it spinach, avocado, and chia seeds.

    My newest invention!!!!! Red Onion Gravy. Just sauteed red onions with a lil butter added sesoning to taste and coconut milk. I used it to pur over my pan-seared pork chop!
