Not my prettiest meals, I've been sick.
Tandoori Chicken with riata, tomatoes and cos lettuce I used as 'scoops'.

Super easy,
If you don't feel like making the dough from scratch, just get some frozen empanada dough made by Goya, should be in your frozen foods section. After they thaw, I like to roll them out a tad thinner to fit more stuff in them.
Small dice some potatoes and chorizo (spanish chorizo, which is a hard sausage vs a mexican chorizo. I'm sure you could use either one though), heat up a pan with some duck fat or cooking oil of your choice and throw in your potatoes, season with salt. Just as the potatoes are cooked all the way throw and starting to brown, throw in chorizo and let that get crisp and the potatoes will finish browning.
Set aside filling and let cool for a bit
grate some manchego, set aside
take a little bit of the filling and cheese and place it in the middle of the dough, fold over the dough and seal with some water on your fingertip. After that, braid it, google repulgue for some videos.
After finishing all of them, you can either bake @ 375 or deep fry, if you bake them wash them with a little egg wash. Fry or bake till golden brown and serve0 -
