    A first for me - I made cheese enchiladas last night with homemade enchilada sauce. They were AMAZING.

    Per enchilada - Cals/Carbs/Fat/Protein - 206/21/5/10

    OH MY! That looks delicious!! Recipe please!!

    For the enchiladas:

    Ingredients:
    • 8 Tortillas
    • 1 cup shredded low fat cheese
    • 1/2 cup fat-free cottage cheese
    • 2 spring onion
    • 1 cup baby spinach, shredded
    • 1 cup part-skim ricotta
    • 2 Tbsp diced chilis
    • 3 Tbsp sliced black olives

    Mix cottage cheese, spring onion, ricotta, spinach and chilis in a large bowl. Add 1/2 cup of the shredded cheese (I used a mix of mozzarella, cheddar and parmesan). Mix well. Place dollop of mix in centre of tortilla and wrap. Place seam-side down in a baking dish with a layer of enchilada sauce at the bottom. Once all enchiladas are prepared, top with enchilada sauce, the remainder of the cheese, and sprinkle with olives, then bake for 15 min at approximately 175C (350F).

    For the sauce:
    3 cups organic low sodium vegetable broth
    1/4 cup tomato paste
    1/4 cup all purpose flour
    2 Tbsp. olive oil
    2 tsp. cumin
    1/4 tsp. garlic powder
    1/4 tsp. onion powder
    1/4 tsp. chili powder
    Salt/pepper

    in a saucepan, heat olive oil over medium heat. Add tomato paste, flour, 2 tsp. cumin, garlic powder, onion powder, and chili powder. Cook 1 minute, whisking. Whisk in broth, bring to a boil. Reduce to simmer, and cook until slightly thickened about 8 minutes. Salt/pepper to taste, and set aside.

    Protein fluff with various toppings. Of course I ate both bowls in one sitting, it just looked nicer that way (and I could fit more toppings... yes.)

    I was watching Biggest Loser the other week and they suggested a dinner. Sweet Potato, Chili made with ground turkey kidney beans. Now I LOVE sour cream so I took their suggestion and used Nonfat Greek plain Yogurt. I would have never put that combination together. IT WAS FANTASTIC. Total cals 312. Sorry I don't have pictures.

    Shiritaki Noodle stir fry! Whole pack of noodles (40 calories!) + 2cups veggies (mushroom, onion, cabbage, carrot, red pepper, snap peas, etc), 2 oz. grilled chicken, 1.5 tablespoons spicy peanut sauce = HUGE LUNCH for under 200 cals

    OMG that is crazy...how much was serving?
