Forgot to take a pic of it on the plate (we were too busy actually eating them!) but here they are going into the oven. Stuffed portabella caps. Sauteed 12 oz. of shrimp with seafood rub, chopped orange pepper, the chopped mushroom stems, and 1/2 jar of alfredo sauce. Put a tomato slice inside each mushroom and topped with the seafood mix. Popped them in the oven at 400 for 15 minutes. They were SO GOOD. Each stuffed mushroom has 191 calories, 9 g carbs, 6 g fat, 26 g protein, 5 g fiber, 2 g sugar.

Ezekiel wrap, covered in tomato sauce, cheese and sriracha, topped with mixed greens, apple cider vinegar, flax oil, sunflower seeds, hemp seeds and avocado. Lunch today. It was yum

Great start to the new thread people!I've been eating a lot of the same foods the past weeks, but here's something new from tonight. My take on chrisdavey's protein brownies (added egg, subtracted peanut butter, added some shredded coconut and splenda - recipe here: http://cdnutritionandfitness.blogspot.com.au/2013/02/moist-chocolate-protein-brownies.html)

They're awesome! Next time I may try making them with black beans instead of pumpkin for that little bit extra protein. Have you ever tried making some with beans or tofu?0 -

Bumping the new thread. Some wicked food already as always people.
Hi, I just kind of winged it and added in what I thought was appropriate, serves 2 people. Here's what I did;
ingredients
700ml stock
2-3 tbsp laksa paste (check for shrimp free if veggo)
200ml coconut milk
4 okra, sliced vertically, 1 inch thick
1 skinny eggplant, chopped into large cubes
1/2 brown onion, chopped coarsely
1 head of broccoli
10 green beans, sliced in half
handful of bean shoots
1/2 bundle vermicelli noodles
coriander and vietnamese mint leaves, for serving
Stir fry okra in a little bit of oil for 4-5 minutes, then add in your onion, fry for 2 mins. Add in eggplant and a little of your stock or water to moisten the pan, let cook down till eggplant gets soft. Set aside.
Meanwhile, have a pot of boiling water going and cook noodles to instructions on pack.
Start in another pot your soup base, put the stock and laksa together and bring to a boil, throw in tofu puffs sliced in half, turn down heat and add in coconut milk till it gets hot, not boiling.
Now throw your broccoli and beans into the boiling water and cook for 3-5 mins, in the last minute add beans shoots, drain and set aside.
It is now time to assemble the laksa.
Put noodles in bottom of bowl. Add on all your toppings then pour laksa soup ontop, serve with fresh cilantro/coriander and mint.0 -
