    I love all things chicken. These aren't extremely creative like most of the other things I've seen, but they are yummy and nutritious!

    Chicken Quesadillas - just pan-seared chicken with peppers, onions, and Mexican Cheese blend in a 9 inch tortilla with parsley sprinkled on top. Nothing fancy, but seriously good.

    I wish I had taken a picture of this AFTER it had been grilled, but it looked so gorgeous before going on the grill and then I couldn't wait to eat it! Chicken, peppers, & pineapple kabobs coated in a homemade Asian sauce and placed over jasmine rice. Bangin'!

    Mama Dawn's Chicken Vegetable Soup - whole chicken, green beans, corn, Tex Mex tomato sauce, potatoes, garlic, minced onions. This is my mom's recipe, and it's one of my most favorite things in the world!

    Strawberry & Feta Spinach Salad (I don't remember where I got this recipe). This is a salad that I think is good in a small portion. Baby spinach, sliced strawberries, feta cheese, chopped pecans, and lite raspberry vinaigrette.

    Philly Cheesesteak Stuffed Peppers

    8 oz. Thinly Sliced Roast Beef
    8 Slices Provolone Cheese (can use low-fat)
    2 Large Green Bell Peppers
    1 Medium Sweet Onion
    6 oz. Baby Bella Mushrooms
    1 Tbs. Minced Garlic
    Salt and Pepper (to taste)

    Slice peppers in half lengthwise, remove ribs and seeds. Slice onions and mushrooms. Saute over medium heat with a splash of chicken broth, minced garlic and a little salt & pepper until onions and mushrooms are nice and caramelized (about 20 minutes or so). Preheat oven to 400*. Slice roast beef into thin strips and add to the onion/mushroom mixture. Allow to cook for 5-10 additional minutes. Line the inside of each pepper with a slice of provolone cheese. Fill each pepper with meat mixture until they are nearly overflowing. Top each pepper with another slice of provolone cheese. Bake for 15-20 minutes until the cheese on top is golden brown.

    Each half, which is a pretty large serving, is about 350 calories (that's will full fat cheese). Serve and ENJOY! :)

    Thanks Meag. Yep, just poached in the oatmeal. I use old-fashioned rolled oats - bring water to boil, add oats, take down to simmer, wait a couple of minutes, and then finish with poaching the eggs in for the last few.

    I call this veggie lentil soup! It has red lentils, carrots, onions, tomatoes, squash, potato, chicken broth, smoothed and then spices are fresh garlic, ground cumin, salt to taste! DELISH!

    I discovered Brussel Sprouts the other day and i'm obsessed. These turned out so good with mushrooms, a dash of salt and pepper and cooked in olive oil. We ate them with a steak!

    Oh, my! and where may these recipes be found? These look great!!! Particularly the pb cups and the honey lemon chicken... By all means, share! ;o)

    For the PB cups, I just grabbed some PB2, mixed it with some water to make the peanut butter. I melted some milk chocolate chips, and poured some on the bottom of a cup cake liner, added the peanut butter inside and then topped it with more chocolate and stuck it in the fridge to harden. It was so delicious.

    The honey lemon chicken, I marinaded it in a honey, lemon, soy sauce (salt n pepper to taste with some crushed garlic) and let it sit in the fridge for a few hours then I saute' it in a pan (3 minutes one side, 3 minutes other side, then cover and put the stove top on low and let it cook for 10 minutes, then uncover, flip and cook on medium high for another 3 minutes)
