Outside of work today, I was so pleased to see:
So for lunch I had:
Black bean, pickled onion & persian fetta tacos with corn chips and guacamole. Also, free coffee! It was a good start to the semester!0 -

Blimey, I haven't posted here in awhile - Uni's a real time-killer, albeit an interesting one. Awesome eats, people!
Now, some of mine from the past few days.
Salmon fillets with white rice and assorted veggies.
Frozen bananas, four tablespoons almond butter, blueberries and half a bar dark chocolate.
Three of the most AMAZING (hnnnng!) dark Belgian chocolates I have EVER had.
Ground beef and white rice. With gherkins, because gherkins are badass.
Cottage cheese, berry sludge.
And, tonight's dinner:
Ground up (with my meat grinder - awesome buy, btw ) oxheart/lambliver nachos with guac and gherkins. Mixed in a crapton of veggies with the mix this time round, so I have enough leftovers for the next couple of days.0 -
Double smashed onion burgers with cheddar and chipotle mayo and a side of kimchi cheese fries with a fried egg and chipotle mayo

egg white mushroom omelet with pepper jack cheese inside
And those spicy chick peas. NOM!
Dinner for me last night was an orange soy and ginger stirfry over spinach. Tasted better than it looks, and at under 300 cals, including chicken breast, holla. Great meal on a rest day.

Chicken, avocado and garlic and herb bread.
Also,I soaked rice flakes in my protein shake overnight, hoping for a result similar to overnight oats. They didn't soften well, so I whacked the whole lot in the microwave. Don't do that.0 -
4 of these and 7 pieces of bacon tonight.
Not exactly a balanced diet, but pretty damn yummy.

Hi, I have already posted the recipe on here, I think it's on page 2.

Hi, I just kind of winged it and added in what I thought was appropriate, serves 2 people. Here's what I did;
ingredients
700ml stock
2-3 tbsp laksa paste (check for shrimp free if veggo)
200ml coconut milk
4 okra, sliced vertically, 1 inch thick
1 skinny eggplant, chopped into large cubes
1/2 brown onion, chopped coarsely
1 head of broccoli
10 green beans, sliced in half
handful of bean shoots
1/2 bundle vermicelli noodles
coriander and vietnamese mint leaves, for serving
Stir fry okra in a little bit of oil for 4-5 minutes, then add in your onion, fry for 2 mins. Add in eggplant and a little of your stock or water to moisten the pan, let cook down till eggplant gets soft. Set aside.
Meanwhile, have a pot of boiling water going and cook noodles to instructions on pack.
Start in another pot your soup base, put the stock and laksa together and bring to a boil, throw in tofu puffs sliced in half, turn down heat and add in coconut milk till it gets hot, not boiling.
Now throw your broccoli and beans into the boiling water and cook for 3-5 mins, in the last minute add beans shoots, drain and set aside.
It is now time to assemble the laksa.
Put noodles in bottom of bowl. Add on all your toppings then pour laksa soup ontop, serve with fresh cilantro/coriander and mint.0
