    And wine.

    Not very exciting, but one of my favorites.

    ETA: I promise, my table IS NOT that dirty. My iPhone is, though. Oops.

    I love this thread and hope to get my camera fixed soon, so my pics suck for now but you can get the idea!

    I didn't take a pic of breakfast but I had oatmeal with peanut butter and honey soooooo good!

    Lunch: Sauteed kale and garlic, with two fried eggs and roma tomato.

    No pics, but I had

    1 Roma tomato, 1 zucchini, and 5 medium-sized baby bella mushrooms - sauteed and put over 3oz of whole wheat thin spaghetti, and for dessert, a Skinny Cow vanilla ice cream sandwich.

    Christ, can you let me have a recipe for those please? My sons are coming to stay for a couple of days (15 and 12), and I'm trying to teach them to cook something new every time they do ... that would be perfect ... thanks!
    Chorizo, potato and manchego empanadas

    Super easy,

    If you don't feel like making the dough from scratch, just get some frozen empanada dough made by Goya, should be in your frozen foods section. After they thaw, I like to roll them out a tad thinner to fit more stuff in them.

    Small dice some potatoes and chorizo (spanish chorizo, which is a hard sausage vs a mexican chorizo. I'm sure you could use either one though), heat up a pan with some duck fat or cooking oil of your choice and throw in your potatoes, season with salt. Just as the potatoes are cooked all the way throw and starting to brown, throw in chorizo and let that get crisp and the potatoes will finish browning.

    Set aside filling and let cool for a bit

    grate some manchego, set aside

    take a little bit of the filling and cheese and place it in the middle of the dough, fold over the dough and seal with some water on your fingertip. After that, braid it, google repulgue for some videos.

    After finishing all of them, you can either bake @ 375 or deep fry, if you bake them wash them with a little egg wash. Fry or bake till golden brown and serve

    my breakfast this morning: old-fashioned oats made with organic soy milk, 2 tbsp flaxseed meal, 1 tbsp organic powdered peanut butter, 1/2 cup frozen blueberries, and 1/2 cup frozen raspberries :)

    The best way to lose weight is to eat real food - most of which this is - in moderation, instead of diet food. That way once you're at a healthy weight you can maintain your eating habits and just increase your portions or treats, or frequency of meals, etc to meet your calorie needs.

    Diet food is sh*tty and boring. Weight loss is absolutely possible with real, good, tasty food. I know; I've lost 80lbs.

    Today's lunch: 1/2 green bell peper stuffed with some seasoned ground beef, a little bit of onion, lettus and some salsa. Rest of lettus, meat and onion made a little salad. It was under 300 calories until I added the salsa (now its 302 calories).
