Cauliflower Buffalo "Wings"

INGREDIENTS:
1 Head Cauliflower
1 Cup 1% Milk
3/4 Cup Whole Wheat Flour
1 Tablespoon Garlic Powder
1 Tablespoon Butter
1/2 Cup Frank's Red Hot Sauce
INSTRUCTIONS:
Preheat oven to 450 Degrees. Trim the head of cauliflower into appetizer sized bites and set aside. In a bowl stir together milk, flour and garlic powder. Dip each piece of cauliflower into the batter and allow the extra batter to drip off. Place on a greased baking sheet.
Bake for 18 minutes.
Melt the butter in a saucepan over low heat and add the Frank's hot sauce and stir. Toss cooked cauliflower pieces with the sauce. Put back on cookie sheet and bake for 5 to 7 more minutes in the oven

My brother is vegan so I made these today with vegan substitutions, and he really liked them. For me my first thought was "It's good, not a buffalo wing, but good." However the more I ate the more "wing-like" they seemed and it really satisfied my wing craving. After eating the entire portion I allotted myself, I can safely say I will be making this again. Next time I am going to try to use less liquid in the batter to make it thicker, hopefully that will crisp up more and give it more crunch.0

I've made them twice (Skinnytaste recipe) and find them to be soggy.
Next time I am omitting the batter and will just roast cauliflower, than add the butter/hot sauce mixture at the end.0 -

I made a version of these (3/4 cup water instead of milk) for a potluck and I they were a huge hit!0
