    what size should one be though cause I got 24 but they were tiny .. so unsure lol x

    Here is my adapted version I just baked:

    Fry's - Large Grade AA Eggs - 2 Eggs
    Truvia - Baking Blend - 1/2 cup
    Bananas - Raw - 2 medium (7" to 7-7/8" long)
    Water - 3 fl oz
    Kroger Brand - Whole Wheat Flour - 1.3 cup
    Kroger - Baking Powder - 0.25 teaspoon
    Kroger - Baking Soda - 0.5 tsp
    Morton - Iodized Table Salt - 0.5 tsp
    Spices - Pumpkin pie spice - 1 tsp
    Vanilla extract - 1 tsp
    Materne Go Go Squeez - Apple-Banana Applesauce on the Go - 2 pouches

    Mix wet ingredients and dry ingredients separately, then blend together. Fill mini muffin tins all the way to the top and bake at 350 for 20 minutes. Makes 32 mini muffins.

    Total: 1,300 calories, 26 g protein, 14 g fat, 302 g carbs
    Per Serving (2 mini muffins): 81 calories, 2 g protein, 1 g fat, 19 g carbs

    These turned out really moist! I wanted to get the "base" recipe down and then it would be great to add some other things like mini chocolate chips, nuts, craisins, etc. They're definitely higher carb and lower protein, but they satisfy a sweet tooth without going crazy. Cheers!

    I make these banana muffins all the time and the kids love them. I had no idea they were only around 80 calories per muffin.

    I fill 24 muffin compartments 2/3rds of the way with the mix. You don't have to use the spices I've added to this recipe. The original recipe doesn't have any spices in it but I love it with cinnamon and nutmeg and sometimes I add pumpkin spice. You can also substitute the eggs with egg beaters if thats your thing and the sugar you can substitute with splenda. My MIL is diabetic and would substitute 1/2 a cup of splenda for 1 cup of sugar since splenda is twice as sweet as sugar. That would also bring your calorie count down. But at only 80 calories per muffin who cares about a couple more calories. You can add a cup of raw oats and a cup of raisins as well. I usually double the recipe and make half without and the other half with the raisins and oats. Kids don't care for the oats or raisins but hubby and I do. But that does increase your calorie count. So run it through the recipe builder to get an accurate count if you add the raisins and oats.

    yup, im bumping!!
    love that there are no nuts in the recipe, my daughter is allergic and Im sure she will love to get a banana muffin! (she has missed them since being diagnosed with a nut allergy, since it is so hard finding banana muffins without the nuts)
