I just received this recipe in a email from LaaLoosh.com -- it looks so good I can't wait to try it only 191 calories & 1.5g fat per serving
Crock Pot Balsamic Chicken with Pears and Portabella Mushrooms from LaaLoosh.com
Ingredients
■1lb skinless, boneless chicken breasts
■1 large or two medium sized pears, cored and sliced thick
■8-10oz portabella mushrooms, sliced thick
■1/2 cup balsamic vinegar
■1 tsp salt
■1/2 tsp black pepper
Instructions
1.Place all ingredients in the crock pot and let cook for about 4-6 hours on low, or until chicken falls apart easily.
Preparation time: 5 minute(s)
Cooking time: 6 hour(s)
Diet tags: Low calorie, Reduced fat, Reduced carbohydrate, High protein
Number of servings (yield): 4
Entire recipe makes 4 servings
Serving size is about 1 ½ cups
Each serving = 4 Points +

Crockpot chicken tacos
3 frozen chicken breasts
1 can black beans drained and rinsed
1 can rotel
1 can corn drained
1 package of taco seasoning
Cook on low 8 to 10 hours (mine cooks on low for 8 and then the crockpot automatically goes to keep warm)
Shred with fork when you get home. Serve in taco shells with your fixings or make nachos out of it (i'm guessing the nachos are far worse though with the chips)
Crockpot BBQ Chicken Wraps
3 frozen chicken breasts
3/4 bottle bbq sauce (I just cover the chicken breasts fairly well)
Diced onion (omit if you dislike)
a little brown sugar
Cook on low 8 hours or so.
Shred with fork
Serve on tortillas with a slice of cheese
Crockpot chicken enchiladas
3 frozen chicken breasts
1 can enchilada sauce
Diced onion (omit if you want)
1 can cream of chicken soup (can be omitted so its a healthier meal)
Cook on low 8 hours or so
Shred with fork
Wrap in tortillas and place in greased baking dish
You can add jalapenos and olives inside tortillas if you like them.
Cover with the leftover sauce from crockpot or get another can of enchilada sauce
Bake at 350 for 20 minutes
Sprinkle with some cheese (omit for healthier option0 -

I go to CrockinGirls.com to get my Crock Pot Recipes. We do a lot of the Beef Stroganoff, Chicken Spaghetti, and In A Hurry Chicken.
You can also take your favorite stove and oven recipes and give it a try in the crock pot

Lately I just put in some beef a small amount of water or broth then add Tibetan hot sauce.
Everything is better with Tibetan hot sauce on it.
I get all the flavor I like, and don't cross contaminate the pans I use to cook my husband's vegetarian meals.0 -

wild boar or pork loin cooked on low for 8hrs in 2 cups beef broth. remove from crockpot, pull and add favorite bbq sauce0

top with 1 cup pineapple
top with 1/2 cup green salsa
Cook on low 4-6 hours
Serve over rice or quinoa, or with tacos.

5-7 boneless skinless chicken breasts
Any kind of seasoning you want.
1) Put chicken breasts in crockpot, and fill enough water to slighty cover all the chicken breasts.
2) Put as much seasoning as you want. I use Ms. Dash seasonings and anything with no salt.
Cook on low for 6 hours.
Take all chicken out and shred it up.
That's plenty of chicken to eat for the week in many different ways. You can eat it over rice or noodles, or you can make a sandwich or wrap with it. It's a great way to cook chicken breast.
I boil chicken all the time. I can't believe i never thought of the crock pot. DOH!0 -
