That looks delicious! And the shrimp sounds like a great addition. I bet chicken would be good in it too!

My family and I made this today for dinner...
It was a little disappointing though... Definitely not worth the calories. :/
We won't be making it again, I'm sorry.

If you want a quick and easy version of this, that's vegan friendly, check out this recipe: http://ohsheglows.com/recipage/?recipe_id=6001811

I've heard ahhhhmazing things! Add/alter as you see fit :)

I found it worth every bit of calories and I haven't eaten pasta in a year. My family thougth it very good. To bad you didnt' like it. I also didn't have a full serving so maybe that's why it was worth it to me.

Made this tonight and OMFG is it delectable. I roasted my shrimp, and used mini heirloom tomatoes. Left out the pine nuts and Parmesan, but not for any particular reason, and didn't miss them. Upped the garlic a bit and used 1 T olive oil in the "sauce" and coconut oil spray for all the roasting.

I split it into 3 servings with 5 colossal shrimp and we're very happily stuffed.

I'm making this today for lunch with chicken! :) Will tweak a bit, no pine nuts or parm (because I do not have them on hand, or shrimp for that matter! lol). BUT I do have avocado, chicken, whole wheat pasta, tomatoes and garlic.....

I finally made this - SO DELICIOUS!! I didn't use parm or pine nuts and only 1 tbsp of oil (in the avocado mixure; just lightly sprayed the tomatoes) so it was only 335 cals/serving, so worth it!

I made this the other night for my husband and myself. I loved it! It was kind of like an Alfredo, but with good fat from the avocados. I didn't have shrimp on hand but I did have a bit of chicken, so I used that instead and that was the only way I altered the recipe. Delish!!!! Next time I might try squeezing an orange instead of using the lemon, only because my husband is not a fan of lemon in any shape or form and he could taste it. I loved it though.
