Healthy Egg Salad! 88 cals, 9g protein! (low carb)

This recipe has become a recent favorite of mine, so I thought I'd share! I love that it's high in protein. It also happens to be low in carbs for all you low-carbers out there! It's very customizable; I just made this with what I had on hand. The main secret is using greek yogurt instead of mayo (you won't miss the mayo, trust me).

Recipe makes 2 servings. You'll need:

2 large eggs, hard boiled, chopped fine
1/4 cup plain nonfat greek yogurt
1 dill pickle spear, chopped fine
1 tsp yellow mustard
Salt, pepper, paprika, or other sesonings to taste
Any other veggies you want (onion, cabbage, etc.) chopped fine

Stir together all ingredients in a bowl until well mixed. Serve however you'd like; I usually eat mine on whole wheat bread for a sandwich, or use a whole wheat tortilla to make a wrap. Makes 2 servings.

Per serving: 88 calories, 2g carbs, 5g fat, 9g protein

I often eat both servings at once :) Enjoy!

Just forwarded to the wife. We substitute lots of things with Greek Yogurt, but Egg Salad never crossed my mind. Hoping to try this out this weekend. Would make an "after yard work" sandwich. Thanks for sharing!!!

Does the Greek yogurt give the receipe a bitter taste? or can you not really taste the greek yogurt? I am not a fan of Greek Yogurt by itself..

I do mine this way too, but I'll just add 1 full egg and 3 egg whites...saves calories and adds more food!

Also, if you like curried anything try adding curry powder to this recipe...its the bomb!

Also a little sugar free relish is also another tasty addition (but not with the curry LOL).
  • bumping for original version and the curry one!..gonna try this tomorrow!
