I've done this before, but used maybe half that amount of Greek yogurt and it was still too much - super messy and liquidy. Just a heads up.

I've done this recipe lots on my own, except I use dijon mustard in it instead of regular mustard. Otherwise, It's pretty much exactly the same. :D

And if anyone wants to do egg salad with just egg whites doesn't know this, you can just cook them in the microwave and they cook much like hard-boiling. I just pour 'em in a bowl and heat them on high until they puff up.

Sounds great! I am going to try this. I wonder how greek yogurt would taste in a tuna salad? I love egg salad and tuna salad.

Actually, my roommate saw me making this egg salad yesterday and asked the same thing! I said I didn't know (I don't like tuna) but figured it would work, so she tried it out. She said it was good!

It's really good! I've mixed plain greek yogurt with both tuna and salmon before and there wasn't much of a difference in taste to be honest.

I just made the egg salad recipe with a little more than a tablespoon of the greek yogurt to give it a drier consistency.

Then I mixed a tsp of cocoa powder and a tsp of honey into the remaining greek yogurt (used a single-serve 5.3 oz container), popped it into the freezer while I ate my egg salad (2 eggs-worth) over fresh spinach, and had a lovely half-frozen dessert as well. Total calorie count for lunch was under 300 calories. Yum!

I did this not too long ago and all I can say is you better really love Greek yogurt because it's really tangy. Good but tangy. Maybe not use so much if you don't want it so tangy? Just a head's up.
