This recipe has become a recent favorite of mine, so I thought I'd share! I love that it's high in protein. It also happens to be low in carbs for all you low-carbers out there! It's very customizable; I just made this with what I had on hand. The main secret is using greek yogurt instead of mayo (you won't miss the mayo, trust me).
Recipe makes 2 servings. You'll need:
2 large eggs, hard boiled, chopped fine
1/4 cup plain nonfat greek yogurt
1 dill pickle spear, chopped fine
1 tsp yellow mustard
Salt, pepper, paprika, or other sesonings to taste
Any other veggies you want (onion, cabbage, etc.) chopped fine
Stir together all ingredients in a bowl until well mixed. Serve however you'd like; I usually eat mine on whole wheat bread for a sandwich, or use a whole wheat tortilla to make a wrap. Makes 2 servings.
Per serving: 88 calories, 2g carbs, 5g fat, 9g protein
I often eat both servings at once Enjoy!
Just did this yesterday with a can of tuna....Same ingredients...tasted yummy..0 -

lunch for next week! yay!0

I do mine this way too, but I'll just add 1 full egg and 3 egg whites...saves calories and adds more food!
Also, if you like curried anything try adding curry powder to this recipe...its the bomb!
Also a little sugar free relish is also another tasty addition (but not with the curry LOL).0 -
bumping for original version and the curry one!..gonna try this tomorrow!0

I've done this before, but used maybe half that amount of Greek yogurt and it was still too much - super messy and liquidy. Just a heads up.0

I've done this recipe lots on my own, except I use dijon mustard in it instead of regular mustard. Otherwise, It's pretty much exactly the same.
And if anyone wants to do egg salad with just egg whites doesn't know this, you can just cook them in the microwave and they cook much like hard-boiling. I just pour 'em in a bowl and heat them on high until they puff up.0 -

Sounds great! I am going to try this. I wonder how greek yogurt would taste in a tuna salad? I love egg salad and tuna salad.0

Actually, my roommate saw me making this egg salad yesterday and asked the same thing! I said I didn't know (I don't like tuna) but figured it would work, so she tried it out. She said it was good!0 -
