This recipe is from hungry girl.


We've searched high and low for the ULTIMATE guilt-free soft oatmeal raisin cookie. After years of scouring shelves, we decided to throw in the towel and MAKE ONE (several, actually). Here's our recipe now -- for your chewing pleasure!

Ingredients:
3/4 cup regular oats
1/3 cup whole-wheat flour
*1/4 cup raisins (not packed), chopped
1/4 cup brown sugar (not packed)
**2 tbsp. Splenda No Calorie Sweetener (granulated)
2 tbsp. light whipped butter or light buttery spread (like Brummel & Brown), room temperature
2 tbsp. no-sugar-added applesauce
2 tbsp. fat-free liquid egg substitute (like Egg Beaters Original)
***1/4 tsp. vanilla extract
1/4 tsp. baking soda
***1/4 tsp. cinnamon
dash salt

* you can leave it out or use 1/4 cup of anything diced apples, berries, m&ms chocolate chips, whatever your macros will allow
** I used 3 tbsp of splenda
*** I used a full teaspoon for both

Directions:
Preheat oven to 350 degrees.

In a medium bowl, combine brown sugar, Splenda, butter, applesauce, egg substitute, and vanilla extract, and mix thoroughly with a wire whisk or fork.

Add flour, baking soda, cinnamon, and salt, and stir until completely mixed and smooth.

Add oats and raisins, and mix until both are thoroughly coated with the batter.

Line a large baking sheet with parchment paper. Spoon batter onto the sheet in 6 evenly spaced mounds. Using the back of a spoon, spread and flatten batter into circles about 3 1/2 inches wide.

Place in the oven and bake for about 10 minutes, until a toothpick inserted into the center of a cookie comes out clean.

Remove baking sheet from the oven, and allow cookies to cool for 1 minute on the sheet. Then slide parchment paper onto a cool surface, and let cool completely. Enjoy!

    Calorie Per cookie depends on the person scooping the batter on to the cookie sheet here are the macros for the whole batch. ENJOY...

    For those people (myself :) who measure food by weight here are the weight in GRAMS for most of the ingredients

    -60g oats
    -41g flour
    -48g brown sugar
    -3 tablespoons of splenda (just measure regularly)
    -28g I can't believe its not butter light
    -2 tablespoons apple sauce (no sugar added) you may have to buy this IDK
    -34g egg whites
    -1 tsp. vanilla extract
    -1/4 tsp. baking soda
    -2 tsp. cinnamon
    -dash salt

    They make how every many you scoop. I made only four with this recipe. But they spread to about the size of a dollar bill. They are so amazingly good. You may have to play around with the cooking time. less cooking= soft cookies, longer cooking time= a tad crispier cookie.

    When you make them let me know how they turned out :)

    The honey will make the batter consistency more liquid. Thus I can not promise it will bake as pictured. If you wheat germ is to fine to hold the shape of the cookie. tho oats provide the texture and structure. just my $.02, But I am all for experimenting :)
