Yeah, definitely gonna try this! Thanks for sharing.
This recipe has become a recent favorite of mine, so I thought I'd share! I love that it's high in protein. It also happens to be low in carbs for all you low-carbers out there! It's very customizable; I just made this with what I had on hand. The main secret is using greek yogurt instead of mayo (you won't miss the mayo, trust me).

Recipe makes 2 servings. You'll need:

2 large eggs, hard boiled, chopped fine
1/4 cup plain nonfat greek yogurt
1 dill pickle spear, chopped fine
    1 tsp yellow mustard
Salt, pepper, paprika, or other sesonings to taste
Any other veggies you want (onion, cabbage, etc.) chopped fine

Stir together all ingredients in a bowl until well mixed. Serve however you'd like; I usually eat mine on whole wheat bread for a sandwich, or use a whole wheat tortilla to make a wrap. Makes 2 servings.

Per serving: 88 calories, 2g carbs, 5g fat, 9g protein

I often eat both servings at once :) Enjoy!

Earlier a poster mentioned substituting avocado for the yoghurt. Equal portions of mashed avocado and yoghurt is good too. Caloric values for eggs seem to be all over the map. My research indicates 70 calories for 1 large raw egg.

Our medium sized supermarket eggs have the nutritional info on the box and they are the smallest size available in supermarkets in the UK from regular hens.

One medium sized egg has 88 calories.

I'm not sure if US eggs are smaller or what.

    Yummy! Thanks!
  • I like my egg salad - two boiled eggs mashed with fork and mixed with cottage cheese.

I really like faux egg salad: Use same recipe but substitute firm tofu cubed.

I never would have thought of that, but it sounds tasty. I'll be giving that a try sometime.

Sounds amazing. I think I will add a chopped chicken breast as well. More protein (and it simply tastes great, haha). Thanks for the recipe, it was a great inspiration for today :flowerforyou:
