I just made these and they are amazing!!
I only used one piece of bacon to wrap them and I used Serrano peppers instead of jalapenos and subbed cheddar jack shredded cheese for the colby jack or plain cheddar.
Prep time was about 10 minutes, oven cook time was 35 minutes (including broiling to crisp everything up).0 -

Freakin delicious!
I also use everything but the chicken and barbecue sauce to make poppers. Simply spoon the cheese mix into the jalepeno, and wrap with bacon rubbed in brown sugar. Bake until the bacon is crispy.

Anything spicy, cheesy, bbq-y is like crack to me. I had two of these (one chicken breast) and a bunch of spinach. Total calories 450 and I'm full and sleepy (I used half the recommended bacon on accident but it worked out well). I wrapped the rest up before I even started eating.0
