    When roasting veggies I tend to stick to olive oil, salt and pepper. Sometimes I'll throw in rosemary, sage or thyme (or all 3) but keeping it simple is what I like. Roasting the veggies rings out so much flavor on it's own, you want to compliment it, not drown it out.
