Eggplant Parmesan is delish. I have a lighter recipe that my husband loves, which requires no frying. Just baking. I also love grilled eggplant and eggplant in pasta.0

Love it. My favorite is stuffed eggplant. You hollow out the eggplant, chop the pulp and sautee it for about 5-7 minutes, add in half a chopped onion (white, yellow, or sweet but I like white best), one small chopped tomato, and a tablespoon of white wine vinegar. Sautee until most of the liquid is evaporated then stir in as much feta as you like. You can scoop the mixture back into the eggplant shells, into a bell/ pablano pepper, or baking pan. YOu can sprinkle on bread crumbs and Parmesan if you'd like-- I don't as the feta is cheesy enough for me-- and bake at 350 for 10 minutes or so.0

I have just discovered eggplant, and I love it!
I found a healthier meat lasagna replaces the majority of meat with eggplant, and it is SO FREAKING GOOD!

Not a fan of the texture so I don't like it so much by itself but I'm fine if it is mixed into other things. OR smothered down with onions and shrimp or made in a rice dressing with ground beef.0

LOVE IT! It's my favorite food really. Eggplant parm, eggplant lasagna, eggplant boats( with mushrooms, cheese & breadcrumbs), roasted, baba ghanoush, in pasta, sauteed with onions and mint and added to quinoa with feta. I could go on and on!0

I create a lasagna with layers of thin eggplant instead of noodles. Lower carb and lower starch, but soooo good!0

This is almost exactly the way I make it, too - but with lots of garlic and some basil. It really is delicious, and if you go easy on the olive oil you can eat a lot of it for very few calories.0 -

I absolutely love all vegetables. I would eat nothing but veggies if I wasn't trying to hit a protein goal. But I really dislike eggplant. I love Baba Ganoush, but all other eggplant needs to DIAF. The skin is a pretty color though.0

Ha ha I was thinking the same thing. I love egg plant. I love all food. But, I am not crazy about protein foods and since I like everything the thing I like least gets shoved to the bottom of my priority list.0 -
I love to dice and sautee, then hide in spaghetti sauce, so my kids don't know. lol!0

Do you have to cook the eggplant first? i have never made anything with eggplant but would like to try this. does the skin stay on it? do you cut it legthwise or widthwise?0 -

LOVE, LOVE, LOVE it!!! But, about 5 years ago, I developed an allergy to it :sad: . Not terrible, but it makes my throat itch. If I'm really craving some, I'll have it, but it makes me nervous.0
