I don't really like the thick gelatinous consistency.

I mix a tablespoon of Chia with a tablespoon of hemp seed and eat it with a spoon -- followed by lots of water.

Not weird, that is the most common starting use for them, until you get a bit more adventurous.

I have been making strawberry jam with them: 12 oz strawberries, 1 tbsp water, 1 tbsp agave and 3 tbsp chia seeds. Let chill in the fridge for a bit. I combine it with cottage cheese or greek yogurt. Good for a few days in the fridge

Had to make sure the poop benefits were mentioned.

I haven't had any in a while, but I used to love putting them in my Chobani yogurts. I like to eat them before then get all gelatinous.

I mix mine up with greek yogurt, I guess the texture is an acquired taste for people, but I love it.

^^^ I do this too or in a protein shake. I've even thrown them on top of salads. They are crunchy...much like a small, black poppy seed if you don't soak them. So, if you don't like the jelly/tapioca taste, you can just eat them when they are still crunchy.

I add them to baked goods. Lemon or banana chia seed muffins and even to "healthy" chocolate chip cookies.

I love them in kombucha. Also, in gluten free baking, grinding them into a meal/flour gives great texture and nixes crumbliness.

I use them in my daily (or almost daily) breakfast oatmeal
    1/4 cup steel cut oats
    1 cup water
    1 Tbsp chia seeds
    2 Tbsp ground flax seed
    2 tsp cinnamon
    1 Tbsp coconut oil
Simmer in pot on stove about 20 minutes, stirring frequently.
Put in large bowl and add and stir together well:
1/2 cup plain, no fat, greek yogurt

For sweetness, add sweetener of choice to taste (I use NuNaturals liquid stevia) or add a Tbsp of your favorite jam or jelly.

    This lasts me for hours:)
