    I WANNA KNOW HOW THEY COME UP WITH 27 CALORIES>?????????????????

    Since I used different ingredients (didn't have bread crumbs so had to crush up crackers) I put mine into the recipe calculator http://www.myfitnesspal.com/recipe/calculator and mine came out to 25 cals per tot.

    I recently came across a recipe for Zucchini tots and decided to give them a try. So so glad I did. They are so good and only

    27 calories
    2 carbs
    1 fat
    2 protein
    0 fibre
    0 sugar

    Zucchini Tots
    yields: 12 mini muffins


    1 cups zucchini, grated
    1 egg
    1/4 yellow onion, diced
    1/4 cup cheese (cheddar or Parmesan work the best)
    1/4 cup bread crumbs - I used Italian style
    Salt and Pepper

    1. Preheat oven to 400F. Spray a mini-muffin tin with non-stick spray, set aside.
    2. Grate the zucchini and then place in a dish towel to squeeze out the excess water- like when using frozen spinach; if you skip this part, the middle of the zucchini tots will be really soggy while the outside gets crispy and no one wants that.
    3. In a bowl combine, the egg, onion, cheese, bread crumbs, zucchini, salt and pepper.
    4. Using a spoon or a cookie scoop, fill the muffin cups to the top. Bake for 15-18 minutes, or until the top is browned and set.

    Found a recipe similar but they substituted ground flax for the beadcrumbs...hmm...
    I think I will have to try them both ways and see which one I like best.

    So so good!! I didn't have any zucchini, so I just used fresh raw carrots. I shredded them with my shredder and placed them in a napkin to remove some of the moisture. I also used my garlic butter croutons. I put them in a baggie and crushed them with my bread roller. Instead of using salt and pepper I used my garlic pepper seasoning. Guys...it was so stinking good! I dipped them in ketchup and ate almost all of them. Husband had two and my daughter had one. Wish I had more to eat right now! Oh yeah, I just scooped them onto a pan, it only made 8 this way, I'm sure if I had the small cupcake pan it would have made 12, but unfortunately I couldn't locate it.
