Went out for some killer thai food- lighting was terrible in the restaurant though, and I didn't want to ruin the meal by blinding everyone with my flash
Shared fresh shrimp rolls w/ peanut sauce and mango salad for apps
Dinner was 3 entrees split amongst us - an herbal chicken, pork and green been curry, and my choice of mixed veggie and holy basil - with some jasmine rice

Breakfast: vanilla soy yogurt, a dash of chocolate soy milk/chia seeds/maple syrup, bananas.
Lunch: Spinach, baby carrots, roma tomato, cajun turkey breast & Italian dressing.
Snack: Mini chocolate soy ice cream sandwich.
Dinner: Whole wheat penne, roma tomato, zucchini, mushroom, broccoli, olive oil & cracked red pepper.0 -

Yesterday's dinner - Thai Seitan Salad: Crispy marinated seitan, romaine, bell pepper, mango, avocado, lemongrass and tons of fresh herbs from my windowsill garden.

Meatless Mondays today, for fun. Spicy black beans with onions/peppers/tomatoes, spinach, pico, olives, and cilantro. Made "nachos" from sweet potato rings and some whole grain tortillas. One huge plate of healthy deliciousness.

Breakfast: Vanilla soy yogurt, splash of chocolate soy milk, chia seeds, sliced bananas and mandarin oranges.
Lunch: Whole wheat penne, smoked gouda cheese, broccoli, roma tomato, zucchini, mushrooms, olive oil and cracked pepper.
Snack: Another mini chocolate soy ice cream sandwich, this picture has a better size comparison.
Dinner: Baby spinach, roma tomato, black beans, greek yogurt guacamole, Italian dressing, lime.
A lot of salad this past week, can't wait to bring on the decadence.0 -
