    This is my all time favorite recipe ... very yummy!!!

    Gingered Chicken with Mango Recipe

    • Olive oil
    • 2 cloves fresh garlic, crushed
    • 2 pounds chicken breast fillets, skinned
    • 1 cup peeled and diced mangoes
    • 1/4 cup dark brown sugar (I use two sweetners instead)
    • 1/4 teaspoon freshly ground cloves
    • 2 teaspoons ground ginger
    • 1/4 teaspoon nutmeg
    • 1 teaspoon soy sauce
    • Salt and freshly ground pepper to taste

    Heat the oil in a heavy frying pan. Add the garlic and saute for a few minutes.
    Then, add the chicken fillets. Cook for about 15 to 20 minutes until the chicken is cooked through. Meanwhile, in a medium-sized bowl, combine the mango with the sugar, cloves, ginger, and nutmeg. Pour the mixture over the cooked fillets and gently mix to cover the chicken pieces. Add soy sauce, salt, and pepper to taste. Cook for about 10 more minutes.

    I tried this today....so yummy!

    Hominy and Tomatoes. In crockpot layer 4 chicken thighs and diced tomatoes, 1 medium onion, garlci and 1 can hominy (drained). Bake on high 4 hrs or on low 8 hrs. If you like it spicy add some green chilies and tomatillos.

    I love skinnytaste recipes.. there is a yummy crockpot buffalo chicken recipe (skinnytaste.com)..also like coconut and pistachio encrusted haddock!! My hubs made for me on mothers day :)

    I buy boneless skinless chicken thighs and run them through my meat grinder. They make the best burgers! Moist with a wonderful texture. The ground meat takes on any flavor you want to make it. I also use the ground thigh meat in any recipe that calls for any type of ground meat. Great in spaghetti, meatloaf, tacos and heck, I also just sprinkle a little garlic powder on and fry a patty to eat with veggies, etc. I also eat chicken thighs whole, but the ground tastes better to me, probably because the little fat that's in them is evenly distributed. I paid about $110 for my electric meat grinder and it's worth its weight in gold. Makes good sausages as well...oh, ground chicken thighs also make the best sausage, whether it's Italian or breakfast.

    The combination of spices in this recipe looks a little strange, but you gotta try it! This stuff is delicious and easy to make!

    Chicken Chili With a Kick


    1 lb. ground chicken breast (or turkey)
    1 cup chopped onion
    1 can Italian style diced tomatoes
    1 cup tomato sauce
    1 cup water
    4 tsp chili powder
    2 tsp Worcestershire sauce
    2 tsp white wine vinegar (or 1 1/2 tsp regular vinegar)
    2 bay leaves
    1/2 tsp salt
    1/2 tsp garlic powder
    1/8 tsp each, cinnamon and allspice
    1/2 tsp cayenne (or to taste)
    1 cup cooked rice (basmati or wild mix holds up best in this recipe)

    Spray large pot with nonstick cooking spray and heat over medium-high heat; add crumbled chicken and onion. Cook stirring occasionally, until meat is slightly browned, about 5 minutes. Add remaining ingredients, except rice, and stir well to combine. Reduce heat to low and let simmer, stirring occasionally, until chili is thick, 25 to 30 minutes. Add rice during last 5 to 10 minutes. Remove bay leaves before serving.

    Makes 4 servings.

    Boneless Buffalo Chicken Bites. This is a recipe I found years ago and it's been in my regular rotation ever since. Absolutely delicious!.

    I know you're looking for chicken recipes, but in the first page you mentioned being open to other sources of proteins. This is one of my favorite fish recipes:

    Oven Honey-Baked Salmon (1 serving is approximately 4-6 oz.)

    Preheat oven to 400

    1 large salmon filet (skin attached) (thawed)
    Pam baking spray
    1/4 cup honey
    1 tbsp molasses
    2 tsp salt

    Spray glass pan with Pam liberally until pan is thoroughly coated but not dripping. Lay salmon skin-side down. In small bowl, mix honey, salt, and molasses until well mixed. Use basting brush to brush top of the salmon with mixture. Use aluminum foil to cover glass pan.

    Bake covered for 15-25 minutes until salmon flakes easily with a fork.

    This recipe is very tasty and leaves the salmon very moist with a great sweet flavor.

    Goes well with rice.

    1 lb. of curry chicken
    Total calories: 450


    Cut 1 lb of chicken breast in chunks
    Fry in 1 tbsp of olive oil

    Dice 1/2 green pepper
    Mince 3 clove of garlic
    Boil a handful. Of brocilli

    Place cooked chicken chunks aside

    Put another tbsp Of oil oil in pan
    Add green pepper first, garlic second, brocilli last
    Stir occasionally for about five. Mins

    Add 2 tsp. Of curry powder
    1/2 of coconut milk (or any milk)
    1 source peach yogurt container (or whatever yogurt, peach is nice)
    Stir into veggies

    Add chicken chunks and stir th the sauce

    Simmer for 5 mins.

    Eat with whatever side or on its own. I usually have rice or naan bread.

    There is some AWESOME pineapple habanero bottled sauce from Costco that goes amazingly well with chicken. (Fish, too) Spoon a few tablespoons over chicken breast, cover with foil and bake until done. It is SO good, and quite spicy, so it's not for pu**ies!

    My daughter says this often! LOL..mom chicken again, I like to bake it the best. I really love making whole chickens also, I season very well with mrs dash and herbs and its so tasty and juicy! :drinker:
