vegan cauliflower alfredo sauce

mmmm, creamy cauliflower alfredo sauce. over some macaroni. perfect for this cold rainy weather here in new york.

this makes about 2 cups

1 1/2 cups raw cauliflower
1/4 tsp garlic powder or 2 tsp minced garlic
1/4 to 1/2 tsp salt
2 tbsp butter spread of choice (earth balance of smart balance) or 2 tbsp olive oil and a little extra salt
1 cup milk of choice (coconut milk all the way!!)
optional: 1/2 cup nutritional yeast of 1/2 cup shredded mozzarella (such as daiya brand)
optional: a little dijon mustard or lemon juice, or even some oregano.

throw all the ingredients in a pot, and bring to a complete boil. cover and simmer 15 minutes or until the cauliflower is tender and falls apart. pulverize when done in a blender, and serve over pasta, spaghetti squash, quinoa, couscous, veggies, whatever you prefer! this does get thicker as it sits

makes 4 servings if 1/2 cup, or 8 if 1/4 cup.

    Start with whole garlic cloves, saute in very little olive oil (1/2 tsp or so). Do not brown the garlic, just bubbly and slightly tinged. Add cauliflower and cover with water (or water + any milk of your choice). You have to cook the cauliflower well, beyond the point you think it is cooked and done, about 20 mins. Cool and then blend. I use Osterizer, run it longer than necessary, and always get creamy sauce. Salt and pepper, nutmeg powder, dried Italian herbs in the end, when I return the sauce to the pan to boil, add water to adjust consistency.

    I threw mine in the blender and that made it less mealy. So yummy ! Froze it and am going to buy some spaghetti squash and put it on there.
