    broccoli, believe it or not.

    I like it steamed, with s&p and some vinegar or lemon juice

    If I had to pick just one veggie, I would have to say colored peppers. You can add them to just about anything for added flavor and they are low in calories. I just had them tonight on a wrap pizza.

    I think broccoli too for me. I use it all the time in stirfrys. I'm not as fond of it cooked, but that is ok too.

    Asparagus...roasted! I try not to boil any veggies because you can lose nutrients that way.

    broccoli--it doesn't mattter how you make it as u cnt go wrong! A close runner up is brussel sprouts, but they have to be steamed. Also cucumbers--but I think that is considrered a fruit since there are seeds

    Beets! Peeled and cut up with a pat of butter salt and sometimes some balsamic vinegar, place in tinfoil and bake or BBQ... Delicious!

    What I eat the most? Raw green beans/sugar snap peas. I eat them by the bag while I'm at work - literally like a pound a day.

    What I love the most? Brussels sprouts - slice them up nice and thin so they're like ribbons and add cayenne powder, salt, pepper. Heat up a frying pan HOT, add coconut oil. Throw them in there and let them brown a bit, but don't cook too much. Not super low cal with the oil, but at least it's healthy oil! Even my husband likes them and he swore he hated brussels sprouts before.

    Broccoli! Loooooove broccoli. Steamed and seasoned with lemon pepper or nutritional yeast or just plain. Yum. And brussels sprouts, steamed and sprinkled with balsamic vinegar.

    But I've also never met a vegetable that tasted bad after it's been roasted with garlic and olive oil. :D

    Sorry can't choose just one, l love most veggies. I don't eat peppers ( except for hot peppers once in a while, regular ones disagree with me) and I'm not a fan of okra or brussel sprouts. Otherwise I love all veg.

    Oven roasted: Eggplant slices, fennel, red onion, zucchini, beets, sweet potatoes
    Steamed and drizzled with lemon: broccoli, green beans
    Stewed with tomatoes: eggplant, green beans, squash
    Cooked in lemonny sauce: artichoke hearts, squash, celery

    Secret on eggplant that I learned in Italy (I didn't like it before then either). You slice it up, place it on a plate covered with salt, cover it with salt until you can't see the slices. Keep it like this for over an hour. When you wash it off it will have lost much of it's water and will seem sort of dry. Now dice it up with some fresh garlic and pan stir fry in about a tablespoon of oil. Add some fresh tomatoes also diced up and whatever other veggie you like (red/orange/yellow peppers, zucchini, yellow squash, sweet onion) and it make the best sauce for a baked potato, to mix with fresh pasta, to pour over couscous, to eat with quinoa, etc... You will for sure see how good it is. The trick is to take out the bitterness with the salt. Enjoy!

  • Lightly steamed Brussels sprouts served plain or with choice of mustard.
    Steamed sliced beets with a little salt.
    Asparagus sautéed in a little coconut oil with garlic, and lemon juice to finish.
    Baked sweet potatoes or yams with jackets.
    Eggplant in a casserole with tomatoes, green peppers, onions, butternut squash baked without liquid, optional cheese topping at end of baking. Mmm, mmm!
