    Skin on Salmon, sauteed kale with bacon and garlic. Was crispy and crunchy skin on the salmon that I just wanted to eat more of.

    My leftovers from lunch, hehe :) It was sauteed veggie chicken, yellow squash, broccoli and parmesan that I ate with a homemade tomato sauce. I strained some of the excess liquid from the tomato sauce, mixed it with the sautee plus a spoonful of seasoned bread crumbs, topped with aged provolone, and baked at 400F for 15 minutes.

    These are Vietnamese Spring Rolls, they are one of my favorite things to eat. The picture is from my cookbook that I wrote with my sister. Now that I'm eating healthy, I substitute the rice noodles with Shiritaki Yam Noodles (ZERO calories!). I also use salmon or shrimp instead of pork. It's packed full of fresh veggies and herbs, they're super filling, and only 80 calories for each spring roll- that includes the dipping sauce as well!

    Vietnamese Chicken Salad

    This is super easy, super healthy, and super tasty! Just throw together a bag of tri-color cole slaw, a couple of shredded chicken breasts, cilantro, mint, lime juice, and then a home made dressing of marinated red onion in a little bit of oil, vinegar, sugar, salt, and pepper. I love this stuff.

    That one was from near my work in Mt Waverley. But we went to a good place in Springvale that sold nothing but pho. There is a similar place in the city, corner of Lonsdale and Russell.
