Lunch today...YUMMY!
2 Wasa Crisps with homemade Tuna Salad, topped with sliced tomato & cucumber. Celery with some PB2 and a string cheese. Delish! And for under 300 calories...awesome!

This is a butterfly chicken breast, skinless and boneless, oven 'fried' with panko bread crumbs/Italian bread crumbs with a cup of brown rice made with low sodium chicken stock and topped with kale/fennel sauteed in some of the same chicken stock with fresh garlic and a dash or two of sriracha sauce.....it's roughly 662 calories ..... and I'm stuffed -- trying to eat the whole portion !!! Delish

Dinner tonight. Make your own Flatbread Pizza night! We had bowls of toppings, including ground chicken seasoned with oregano & basil, sliced Roma Tomatoes, Spinach, Fresh sauteed mushrooms, Fresh sauteed onion, Fresh sauteed peppers, Shredded Mozzarella Cheese, Marinara for the kids & a couple drops of Olive Oil for our sauce (so the crust wouldn't dry out) I had everything except the Marinara on mine - it was fully loaded. Couldn't pick it up to eat it LOL But so DELISH! Flatbread was from this recipe: http://www.myfitnesspal.com/topics/show/997440-easy-peasy-flatbread-recipe-90cal-per-serving Pretty easy and it was seriously DELICIOUS! Had a small side salad with my homemade copy cat Hidden Valley Ranch dressing.

Dinner tonight was a ham, black-eyed pea and kale soup, served up with ciabatta bread and some cilantro on top. Soup never photographs well for me but this soup is the bomb. Spiced up with some chipotle and cumin.

My uni friend and I made butter chicken at hers. I swear to God, that must be a chef - legit tastes like the stuff I got in the mall pre-coeliac diagnosis. 10/10 for deliciousness.
