Anyone have any awesome recipes they want to share with me?
Tonight I'm making Portabella pizza's with Dayia cheese for myself and fresh peppers and onions.

I make a mean black bean burger if I do say so myself. And they are easy as heck to make.
1 can UNSEASONED black beans (rinsed and drained)
1 tbsp olive oil
2 eggs
3 cloves of garlic
1/2 cup panko bread crumbs (or sub with quinoa)
Season to taste (oregano, salt, onion powder, pepper, etc.)
1.) Blend the black beans, garlic, and olive oil in a food processor until it becomes a thick paste
2.) Mic in eggs and seasoning until even
3.) slowly add in panko bread crumbs
4.) Form into 4-6 buns and grill!
They are a hit with my very carnivorous boyfriend, and they are super low calorie.0 -

Thai Noodles
1 Box Linguine
1/2 Tbs. Crushed Red Pepper
1/2 Cup Sesame Oil
3 Tbs. Honey
3 Tbs. Soy sauce
1 Tbs. Peanut Butter
1/4 Cup Rice Wine Vinegar
Also-
2 shredded carrots
1/2 cup chopped cilantro
1/2 cup green onion
3/4 cup peanuts
sesame seeds
Heat oil, peanut butter, red pepper, and vinegar in a small pan until warm and peanut butter is melted. Mix in the remainder of the ingredients with noodles. Garnish with sesame seeds. I add in tofu that's been lightly fried in coconut oil too! It's really good.0 -

In fact this site has 60 vegan recipes and a lot of them are amazing. They aren't all healthy/whole food/low cal though, so browse with caution, but YUM. If you are an adventurous eater and love to cook and try new things, there is some great stuff here. These were my absolute favorite though (and fyi, I completely excluded the deep fried eggplant bc it was too fattening and the sandwich was already awesome without it). I also like Deliciously Ella http://deliciouslyella.com/, Thug Kitchen http://thugkitchen.com/ and Oh She Glows http://ohsheglows.com/ for beautiful, healthy vegan recipes. Hope that helps. Oh, and I found one last night for a snack on Pinterest that was delish - toast a slice of whole grain bread, top with hummus and avocado (ok, I used guacamole for the bite instead of plain avocado) and then either grill or pan "fry" (I put it in quotes bc I didn't use any oil) tomato slices and throw them on top. Best. Snack. Ever.0 -
It's not really a "recipe" but my recent favorite warm-weather meal:
Spread guacamole (or just mashed avocado) on a Joseph's 60 cal pita, then layer on black beans, shredded lettuce, diced tomato, diced onion, diced bell pepper, corn, a little shredded cheese. Fold it over and eat like a taco. Actually, it basically is a soft taco...0 -

It may not sound like it, but the cauliflower wings are awesome! The texture will surprise you, the cauliflower works perfectly as a substitute for chicken. But beware, it's really spicy! It is a buffalo wings recipe, afterall!0
