What's for Dinner?

Figured this would be a good place for all of us people in a bulk to share our meals.

For me it was:
* Sweet Potato Gnocchi in a butter and sage sauce
* 1/2 cup Edamame shelled
* 2 Full Eggs & 4 Egg white omlette.
* Dessert = Homemade Casein pudding with Graham cracker crumbles and bananas!

764 Cals, 64P / 67C / 27F

Yum! :)

    I'm not trying to gain weight... but dinner will be pan fried pork chops, garlic parmesan farfalle, and California blend mixed vegetables. Dessert will be homemade strawberry ice cream topped with blueberries and fresh toasted coconut.

    I made another attempt at fish tacos. Worked really well this time.

    Pan fried some tilapia with a little salt and pepper.
    Made some white rice with black beans in a separate pan and seasoned it with taco seasoning and chipotle tobasco.

    Took a few tortillas and put them in a hot pan for a minute or two....

    Then I added the rice and bean combo, followed by the fish.
    Squeezed a lime over it.
    Added fresh cilantro, lots of it, chopped.
    Added white onion.
    Mixed some greek yogurt with chipotle tobasco to make sort of a spicy cream sauce, put some of that over it.
    And a little bit of fresh guac.

    And they were BALLER.

    I made Chili that even the kids liked.

    Spicy Turkey Chili

    20 oz Jennie - O ground turkey 93% lean
    1/2 c diced onions
    2 tsp minced garlic
    2 cans Central Market Black beans - low sodium, drained & rinsed
    1 can diced tomatoes - no salt added
    3 TBSP San Marcos Chipotle peppers in Adobo sauce - minced
    2/3 c Great Value whole kernel corn
    3 TBSP Gebhardt chili powder
    1 1/2 tsp ground cumin
    1 tsp black pepper
    1 tsp salt
    32 oz water

    Makes a large pot. After all was said & done I figured it for 6 - 10.6 oz servings at 301 calories, 31 carbs, 7 fat, 27 protein, 7 fiber & 490 sodium if I'm having just chili or I can half serving size if I want to have it with something else.

    I didn't feel really well today so I just had a salad consisting of mushrooms, tomatoes, spinach, kale and bellpeppers. I always make my own dressing either with just a slice of lemon or consisting of olive oil and vinegar and salt and pepper with a mixture of this German dressing.
