I love getting ideas for meals! Especially meals that would be good reheated for lunches at the office.
Tonight I am making hamburger muffins made with ground turkey and low fat cream of mushroom soup! (Found it on allrecipes.com)

Grilling up some nice Alaskan Coho Salmon...I'll probably do a quinoa pilaf with some onion, mushroom, and peppers...and probably some roasted brussels sprouts but I'm still on the fence there.
Not great for a workday reheat I suppose...I don't actually make much that is until the fall/winter months when I do more big casseroles, soups, and stews.0 -

My own version of Southwest salad, using baby kale and fire-roasted corn, black beans, cheddar cheese, and green onions - with a bbq/olive-oil mayo dressing

I love soup..I make a large pot of chicken or beef vegetable soup with tons and tons of veggies..squash,carrots,celery,even green beans and I add a bit of tofu for texture instead of rice. It fills me up without weighing me down especially if I am eating later in the evening towards bed time.0

100% Whole Wheat spaghetti topped Newman's Own spaghetti sauce with sliced Johnsville bratwurst added. Served with peas on the side.0

The other half of my BBQ Brisket chili cheese fries from this weekend. Love that I can still eat the really yummy stuff in smaller portions.0

Baked seasoned salmon, steamed brussel sprouts, and parsleyed new potatoes. I won't eat the potatoes, though my family will. Homemade brownies for dessert (again none for me- I don't like chocolate anyway!)0

93%/7% hamburger and a baked potato. I am on a MAJOR baked potato kick for some strange reason. Good thing I don't slather it with butter or anything; plain works for me.0
