Half an avodaco, pit removed, add an egg where the pit used to be, wrap in foil and bake for 10 minutes at 350. Serve with a salad dressed with your choice of dressing.

Made this incredible dish the other night. I weighed and measured everything that went into it and came out with this:
Chicken, onion, garlic, corn, black beans and spinach on a whole wheat tortilla [with mashed up avocado on it as a "dressing."]

Granted, the whole thing came out to 702 calories by the time I added everything I wanted and made enough to fill me up, but I was still under my goal for the day and it was DELICIOUS.

Quick and easy. I actually am having this for dinner today.

Taylor Farms Asian Chopped Salad (Greens, carrots cabbage, almonds, wontons, and dressing) - 1/3 bag @ 160 calories

    +

    1 Gorton's Salmon filet @ 100 calories

    = 260 calories

Very filling and tasty. Also, the salad is about three servings, so you can have more servings, or save it for later.

A ton of veggies stir fried with ginger and garlic and soy sauce. Served with a small portion of rice and a piece of pan fried white fish and a wedge of lime. Delicious and very very filling for about 400 calories. If I have extra calories to use then I sometimes add some chorizo to the veg when I am stir frying it. This tastes incredible!

Great thread-thanks! This is my latest favorite. Add protein and use veggies on hand. Salad lasts a couple of days in refrigerator.

    Healthier Version Broccoli Salad
    8 -2 ¼ C servings, each serving approximately 172 calories

    7 c chopped raw broccoli
½ c chopped onion (I used green onions)
    ½ c chopped/shredded carrots
½ c chopped radishes, celery or combination of other veggies
    8 slices cooked bacon crumbled
1 c reduced fat cheddar cheese

    Dressing:
    2/3 C Greek yogurt
1/3 C Kraft Mayo with Olive Oil
    8 t. sugar
    3T apple cider vinegar
    Pepper to taste

    YUM that sounds great!

4oz salmon filet (pan-fried with just a little Pam), 100 cal. 150g steamed green beans (seasoned with salt, lemon juice, basil), 52 cal. Half a bagel thin (55 cal) with a wedge of Laughing Cow (35-45 cal depending on type). Handful of cherry tomatoes (~25 cal). Roughly 250cal here depending on cheese flavor; I'd probably elect either to have an Outshine bar for dessert (70 cal for a total of 320) or a single-serve bag of unbuttered popcorn with Accent (100 cal for a total of 350) to snack on later.
