hummus is amazing, as is falafel

I have used these recipes in the past with great results:

    http://mideastfood.about.com/od/appetizerssnacks/r/hummusbitahini.htm

    http://mideastfood.about.com/od/maindishes/r/falafelrecipe.htm

I haven't made a curry with them, but I have tried illumi chickpea and vegetable curry which is delicious and has no crap in them:

    http://www.ilumiworld.com/products/view/vegetable_chickpea_jalfrezi

I know you wanted recipes, but perhaps grab the ingredient list and experiment with different combos? might be able to knock up a nice curry that way?
  • This Chickpea and Quinoa Ratatouille is amazing :)

I only use canned chickpeas so I'm not sure how you'd prepare them before hand but here is a recipe I love. I replace sultanas with chopped up dates, and only use 1 tbsp of mayo. I eat it on its own. So good!

    yum indeed, that looks immense

P.S. dried chickpeas literally just need to be soaked overnight, using dried goods is a little off putting at first but i am getting into it provided i plan the day ahead i am good to go.

    Cheaper too... i think.

I DID!..It took a while. a LONG while to figure this out. I'm thinking< Wait-you can throw ANYTHING into a tossed salad right? (although I never knew the term was about dressing-on-the-bottom.. ( OH damn-click!) then tossing it.... Then I'm thinking canned beans=bad-i use dried only luvey.......then I kept reading... and I'm not sure I needed that on a Sunday Morning!.. Is nothing sacred? What I mean is, there is NO WHERE in my life I would have learned this! Howard Stern's show is as Alien to me as Oprah's. OUCH...

This recipe is delicious. I just eat it straight out of the bowl as is, and I omit the cucumbers.

    Toasted Chickpeas

This is a great recipe that can be changed to fit your taste buds. Simply substitute the dry ingredients for your favorite flavors.

    Ingredients

    1 can chick peas
    1 tsp chili powder
    1 tsp garlic powder
    1 tsp sea salt
    1 lime, squeezed
    Directions

    Step 1

    Preheat the oven to 350.

    Step 2

Mix all the ingredients together in a small mixing bowl until the peas are coated with seasoning.

    Step 3

Bake for 15 minutes, remove from oven. Move the peas around so they will toast on all sides. Return to oven for an additional 15 minutes.

    I really like this one:

Spiced Chickpeas with Potatoes and Tomatoes

    Ingredients
1 medium uncooked potato(es), peeled and cut into 1⁄2-inch cubes
1/4 cup(s) dry lentils, red variety, picked over, rinsed, and drained
    4 tsp canola oil
    1 medium uncooked onion(s), chopped
    1 jalapeno, seeded and chopped
    1/4 tsp garam masala
    1 tsp Cumin seeds
    1 pound(s) plum tomato(es), chopped
15 1/2 oz canned chickpeas, rinsed and drained (I prefer using the dried ones)
1 Tbsp ginger root, peeled and minced
    2 clove(s) (medium) garlic clove(s), minced
    2 Tbsp cilantro, fresh, chopped
    Instructions
Bring a medium saucepan of lightly salted water to a boil. Add the potato and cook until fork-tender, about 7 minutes; remove with a slotted spoon and set aside, reserving the cooking liquid.

Add the lentils to the same saucepan and return to a boil. Cook until the lentils are tender, 8 – 10 minutes; drain and set aside.

Heat the oil in a large nonstick skillet over medium-high heat. Add the onion, jalapeño, garam masala, and cumin. Cook, stirring frequently, until the onion begins to soften, 3 – 4 minutes. Stir in the potato, tomatoes, chickpeas, ginger, and garlic; cook, stirring occasionally, until the tomatoes soften, 4 – 5 minutes. Stir in the lentils and cook until heated through. Remove from the heat and stir in the cilantro. Yields 1 cup per serving.

I am obsessed with roasted chickpeas. Preheat oven to 400 then open and drain a can of chickpeas. Toss in a bowl with spices and olive oil and roast for 40 minutes.

Hummus is always nice and you can change it up with various additions like roasted garlic, roasted red peppers or this yummy Roasted Poblano Hummus.

Is that really all that has to be done? No cooking required to get them to "can level"? I think I might have to make the switch. Way cheaper and probably way lower on sodium levels.
