omg, those picture of Chocolate Covered Katie are awful. I've never seen her before, only visited her blog. Wow.

Agreed. She needs some protien, seriously. She looks ill. I have friends that eat healthy and are thin, but in those pictures- this girl looks like she is emaciated.

I've never tried a cauliflower cake. Thought I'd share my favourite 'healthier' cake recipe. It's super delicious and only 200 cals (6 g protein, 2 g fat, 17 g carbs) per 1/8.

    7 oz soft tofu
    1/2 cup honey
    1 tsp vanilla
1/2 cup espresso or strong coffee
    1/2 cup unsweetened cocoa
1 1/4 cups whole wheat pastry flour
    1 tbsp baking powder
    1 tsp baking soda

Blend tofu, honey, and vanilla in a blender or food processor. Add espresso and cocoa.
Sift flour, baking powder, and soda into a bowl. Add tofu/cocoa mixture and beat well. Pour into lightly oiled 8" bundt pan and bake at 350 for approx 25 mins.

"Couldn't get ahold of no flour, so it's mostly protein. In fact, it's pretty much what we just had for dinner. But I tried to get the frosting as chocolatey tasting as possible."
Deeply move yourself to blow out them candles so we can try a slice!

This is totally unrelated to anything in this thread, but if any of you have watermelon on hand, try it with some feta cheese. Such an amazing combination :)

    ..or soaked in vodka!!!!!!!!!!!!!!!!!!!!!

Well, I saw this recipe and I dared to make it tonight! I made some changes and used 12 square cake pan.

    1 medium cauliflower, (~1.5 lbs.)
    1 large red onion, peeled
    1/4 cup olive oil
    ½ tsp finely chopped rosemary
    10 large eggs white
    ~2 Tablespoons chopped basil
~1 1/2 cups of Visalus Nutritional Powder Sweet Cream
    2½ tsp baking powder
    ½ tsp ground turmeric
1/4 cups Sargento Chef Blend 6 cheese Italian
    Salt and black pepper
Non Stick Spray, to cover pan
    Sprinkled top with cinnamon

I blended it all in the Vitamix and baked for 30 minutes and baked at 350

Haven't read the entire thread, so I don't know if this has been read yet, but why necessarily cauliflower?

If you're just looking for a "healthy" or "clean" cake, what about the tried and tested, and actually relatively GOOD, black bean cake? There are tons of recipes out there for black bean brownies and cakes, as the flavour goes well with chocolate and the texture is still nice - and as an added bonus, it's got protein!

Here's a link to just one recipe, but there are many more out there

This looks good, in a healthy way. Not getting a cake feeling, but it's worth a try. I am going to try to make that on my half birthday next week. But on my actual birthday I think I want more of a traditional cake, birthday is a day where you're aloud to take a day off.

If I got this for my Birthday, I would be so upset!

Why not reward yourself a treat on your special day - it would be so enjoyable, and you can burn it off with over the following days ..

    :)

    Forget the cake.

Paleo Brownies.... which I can't eat because I am allergic to coconut.

I haven't made any of these so I won't vouch for them personnally.

How about one that is just beans and chocolate (mostly)?

This still has flour so I don't think it works for what you are looking for:

And a different version of the chocolate with cauliflower:

And a good source of Paleo recipes that include desserts go to the Chow Stalker website:
