I actually have this on my pinterest and made it yesterday as is, without meat. I liked it but after programming it in, I found that it is way too high of calories for me to eat regularly. The roasted tomatoes make all the difference and toasting the pine nuts is also a really good idea.

I recently tried a similar recipe--Avocado Risotto--rice and avocado and cheese, essentially, you can google for specifics. Anyway, wow was it good. I had never thought to use avocado as a cream sauce. Is there an Oscar for food genius?

I am going to make this sometime this week, but with scallops instead of shrimp, and sun dried tomatoes. Going to serve the scallops on top of the pasta, they had the big ones on sale last night!
