QUINOA SALAD-MMMMMM

I will only eat something that tastes good..lol I have turned many people over to this salad-people that even wouldn't eat healthy a day in their lives. The recipe is hard to "mess up" and super easy and healthy! Feel free to adjust to your liking-this is just what I do!

Serves about 3-4 people
Ingredients:
1 cup Quinoa
2-3 halves of a bell pepper ( I use green red and yellow)-chopped small or however you like veggies chopped in a salad
Cilantro-I do a handful chopped
Red Onion -half a medium
Tomato-about 3 roma tomatoes =chopped
1 can black beans (small can-8 oz?)
1 can corn
1 jalepeno seeded
1 minced garlic
1 avocado-Ive used with and without-tastes just as good!
Chicken- OPTIONAL-I typically make this just vegetarian .

Dressing:
2 limes-juice only
1/4-1/2 cup high grade olive oil ( I eyeball it, just used twice as much olive oil as lemon juice)
a few pinches of CUMIN powder
a few pinches of SALT
Put in a bowl with lid and shake shake shake. Pour over salad and mix immediately.


1Cook Quinoa (1 cup of quinoa 2 cups water, bring to a bowl then turn on low and cover. Cook until all water has disappeared. Turn off burner and put to side. while you put salad together)
2. Chop all veggies and mix in bowl with beans and corn.
3. Add quinoa to veggies.
4. Shake dressing again and pour over salad.
5 Mix immediately.
6. Taste and add more seasoning, spice, or veggies etc to your liking.
ALL DONE-ENJOY!!!

Quinoa has protein fiber & iron! Love this stuff!!!

    Mmmmmm! That looks yummy ! Marks & Spencer's( in the UK) do something similar with salmon instead of chicken that's delicious & is only around 350 calories .

    I also chop a cucumber, steemed asparagus and brocolli florent - minus the beans and corn. Delish - will try this variation :)

    The grainitself will pick up the flavor of what you put in it. IN this s case lemony. The grain tastes like plain unsalted rice. So they skies the limit. Add whatever you want , :)

    BUMP. lol Thanks everyone. I am a creature of habit and latina so this feeds my latina side (jalapeno, tomato, onion, avocado, lemon). lol...

    I will experiment one day when I get tired of this combo-but for now Im turning people into QUINOA enthusiasts with this simple delicious salad! LOL
