What is everyone having for supper tonight? I need some new meal ideas.

I have leftover spinach artichoke dip from the game last night (:grumble: ) so I'm making chicken breasts stuffed with the dip, breaded and baked. Pairing it with some yellow sweet peppers from the garden baked in italian dressing topped with parmesan cheese on top of some wheat noodles. NOM!0

Tonight we are having beef/veggie stirfry over jasmine rice. Tomorrow is crockpot ham/potato soup.0

I had george foreman grilled turkey breast with grilled red peppers and salad which was really filling.
This evening I had homemade shepherds pie and am so full, oh yeah and a slice of homemade cheesecake.
Quinoa, grilled veg and salad is lovely and filling also short grain organic brown rice takes 40 min to cook but trust me it's nothing like supermarket rice as you will be hard pushed to finish 1 spoon also for rice and quinoa add a salad dressing to them to give lovely flavor, I have added my salad dressing to the data base. Cherry tomatoes with diced bell peppers and cucumber in Italian dressing.

Whole wheat spaghetti with ground turkey and half of a turkey sausage. Huge batch of sauce was made a few weeks ago and should keep us in spaghetti sauce for a few months We pre-cook everything (but the pasta )so all we have to do heat it up when we get home for work.0

Mandarin green salad with chicken breast and a pita with tzatziki, followed by fresh strawberries and angel food cake with strawberry yogurt ice cream for dessert.0

Veggie burger with roasted garden veggies and a cup of minestone.0

Mexican Spaghetti Squash Casserole!
1 large spaghetti squash cooked and shredded (google for the method that fits your needs best)
1 can yellow sweet corn kernels
1 can black beans
1 cup feta cheese
1 can stewed tomatoes
1 cup salsa
2 tablespoons olive oil
4 tablespoons taco seasoning
1 cup reduced fat shredded Mexican cheese blend
Preheat oven to 350
Heat olive oil in large skillet
Add cooked and shredded spaghetti squash, corn (drained), beans (drained), feta cheese, tomatoes, salsa, and taco seasoning to skillet
Thoroughly combine and let cook for about 15 minutes, stirring occasionally
Spray 9x13 baking dish with non-stick spray
Add skillet mixture to baking dish
Top with shredded cheese
Bake for 20 minutes, or until cheese is melted and bubbly0 -
Home made chicken & dumplings. I crock pot a couple recipes over the weekends and portion them out for dinners on week nights. Chicken & dumplings is one of my staples.0
