                    Plain Mini Cheesecakes:  makes 12
12 vanilla wafers
8 oz. neufchatel cream cheese, softened (low fat cream cheese, 1/3 less fat)
¼ cup sugar
½ teaspoon vanilla
1 egg
blend the cream cheese, sugar, vanilla, and egg until smooth. place 12 medium-sized muffin liners in a muffin pan. place a vanilla wafer in each liner (flat side down). distribute cream cheese mixture evenly among the 12 muffin cups, about a scant 1/4 cup batter in each. Bake at 325 for 25 minutes. Cool. Refridgerate. Can top each with a teaspoon of fruit preserves if desired (calories for preserves are not included.)

Variation: Spiced mini cheesecakes: makes 12.
Instead of vanilla wafers, use a ginger snap in each muffin liner. Add 1/2 teaspoon each of cinnamon and ground ginger and a pinch of nutmeg to same batter. Bake as above for plain minis. When cool refridgerate. Can top each with a teaspoon of fruit preserves, maybe peach or orange to go with the ginger. Calories for preserves not included in the total.

            Another variation: Chocolate cheesecake minis: If chocolate wafers are available, use instead of vanilla wafer in the bottom of each cupcake paper. I couldn't find any, so I used vanilla wafers.
Make as above for plain cheesecake minis except add to the cream cheese batter 1/4 dark cocoa powder, and a tablespoon or 2 of milk or almond milk to thin the batter down a little. Bake as above. When done, remove from oven and top each mini with 3 Ghiradelli 60% bittersweet chocolate chips. Let them melt and spread across the top of each mini with a small spoon. Cool and refridgerate. 105 calories each, makes 12.0 -

Bake about 20 minutes. cool and refrigerate. Can top each with a teaspoon of fruit spread, jam or apple or pumpkin butter, not included in calorie count.0 -

            I made these with the gingersnap cookies and added cinnamon to the batter. I was only able to fill 11 muffin cups so the calories were a little higher, but right around 100. I keep them in my freezer and take them out 10 minutes before I want to eat them. They are delicious! I encourage all cheesecake lovers to try them
