And an even lower calorie version: 65 calories each, makes 12:
12 vanilla wafers
4 oz. 1/3 less fat cream cheese
4 oz plain non fat Greek yogurt
1/4 cup sugar
1 egg
1 teasp. vanilla extract
Preheat oven to 325 F
Place 12 cupcake papers in muffin tins
Place a vanilla wafer in each paper, flat side down.
combine cream cheese, yogurt, and sugar in a mixing bowl. Beat on medium speed, add egg and vanilla. Beat until very smooth. Spoon a scant 1/4 cup of batter into each cupcake paper to make 12. Bake about 20 minutes. cool and refrigerate. Can top each with a teaspoon of fruit spread, jam or apple or pumpkin butter, not included in calorie count.

I made these with the gingersnap cookies and added cinnamon to the batter. I was only able to fill 11 muffin cups so the calories were a little higher, but right around 100. I keep them in my freezer and take them out 10 minutes before I want to eat them. They are delicious! I encourage all cheesecake lovers to try them0

Plain Mini Cheesecakes: makes 12
12 vanilla wafers
8 oz. neufchatel cream cheese, softened (low fat cream cheese, 1/3 less fat)
¼ cup sugar
½ teaspoon vanilla
1 egg
blend the cream cheese, sugar, vanilla, and egg until smooth. place 12 medium-sized muffin liners in a muffin pan. place a vanilla wafer in each liner (flat side down). distribute cream cheese mixture evenly among the 12 muffin cups, about a scant 1/4 cup batter in each. Bake at 325 for 25 minutes. Cool. Refridgerate. Can top each with a teaspoon of fruit preserves if desired (calories for preserves are not included.)

Variation: Spiced mini cheesecakes: makes 12.
Instead of vanilla wafers, use a ginger snap in each muffin liner. Add 1/2 teaspoon each of cinnamon and ground ginger and a pinch of nutmeg to same batter. Bake as above for plain minis. When cool refridgerate. Can top each with a teaspoon of fruit preserves, maybe peach or orange to go with the ginger. Calories for preserves not included in the total.
Nutrition per serving: 100 calories each, carbs: 11, fat: 5, protein: 2, sodium: 133, calcium: 2

And another: Pumpkin mini cheesecakes: 86 calories each, makes 12:
8 oz. canned pumpkin (1 cup)
4 oz. 1/3 less fat cream cheese (1/2 package)
2 tablespoons brown sugar
2 tablespoons white sugar
1 egg
pumpkin pie spice (I make my own: 1&1/2 teasp. cinnamon, 1/2 teasp. ginger, pinch nutmeg, pinch cloves)
12 gingersnap cookies
preheat oven to 325. place 12 cupcake liners in each muffin pan well. Place a gingersnap in each, flat side down. Mix all ingredients until very smooth. Spoon about 3 tablespoons batter on top of each gingersnap. Bake about 20 min. until set. Cool and refrigerate.0 -
