    I am turning left over spaghetti sauce into chilli. If I don't change leftovers a little bit no one in this house will eat it.

    It's not set in stone, but I'm *probably* going to roast a chicken and serve it with steamed spinach and lemon-scented quinoa. Either that or I'll come home tired and microwave last night's turkey/black bean/butternut squash chili.

    I did the same thing recently with leftover turkey meatloaf. I crumbled it up and made spaghetti sauce with it to pour over spaghetti squash. So Yummy!

    My son has riding lessons tonight, and we will be getting home kind of late, so it will be a quick simple dinner. Probably some brown rice and black beans, mixed together with a little salsa. One of our quick favorites!

    please tell me about this... this sounds wonderful

    how do you cook it? do you heat the salsa with it or on the side... yum i'm hungry now

    I'm gonna make lemon pepper pink salmon with a salad and sauerkraut. I'll probably add something to that later, but idk what yet. Running low on the food stores today.

    Buffalo chicken quinoa...for the second time this week because it is SO good.

    grilled chicken breast marinated in a balsamic and white wine and basil marinade over spaghetti and marinara...probably sauteed green beans and garlic on the side.

    I didn't use crumbles, I had a jar of blue cheese so I used that instead, mixed it all together and used way more hot sauce haha. Magnificent if you add some celery too!

    Haha! This made me LOL, this is what I think to myself sometimes when the husband asks for dinner!
    He's going out with this co-workers so I'm doing a cheat meal of Ellio's Pizza--, working out before though so I don't feel guilty!

    I don't know yet. Why is it always my responsibility to shop for, plan and cook meals? Why can't you do it for once?

  • Today is a creamy pomodoro sauce with spinach and whole wheat pasta. I sub out the cream for fat free greek yogurt and ground up some baked chick peas to sub for the parm. Healthy and delicious.

    i am thinking a big bowl of salad with spinach, cucumbers, peppers, squash,tofu,chickpeas, edamame, almonds and some ranch dressing!!Salad indeed!

    I'm making eggplant "lasagna", using a ground turkey spaghetti sauce, eggplant, and reduced fat ricotta and mozzarella.

    Yogurt with a shot of Whey protein and some mixed frozen berries. I have a Banana just before a 2 hour game @ 7:00pm and a shake afterwards.
    I'm low carb but got into the banana thing from an old coach and use them for sports or sometimes heavy workouts. I'm sure there is a better solution but it is the only time I get a Banana. ;-)
