Veg tacos. Fresh made corn tortillas, filling is a blend of mirepoix, black beans, red quinoa, tomatoes, bell pepper, roasted Hatch chilies, and chili powder. Topped with cabbage, onions, tomatoes, avocado.

We're having a crock pot meal! Rump Roast with carrots and taters with a sauce made from onion soup mix, brown gravy mix, and applesauce. Im a little nervous about the applesauce component but it sure smells fantastic!

If you have left overs I like to put over-medium eggs on it in the morning. The funniest part, I don't even like ham and this is just good for some reason.

I had a chicken drumstick, mashed potatoes and peas. YUM.

    Buffalo chicken quinoa

    Tell me more, please!

Someone had posted it here somewhere a little while ago and I tried it:
    http://www.halfbakedharvest.com/buffalo-chicken-quinoa-salad/
I didn't use crumbles, I had a jar of blue cheese so I used that instead, mixed it all together and used way more hot sauce haha. Magnificent if you add some celery too!

    O.o

    *Abandons work to purchase ingredients*

So worth cutting out early to shop for ;) let me know how awesome it turns out!!
