5min 100cal Protein Pumpkin Pie (allergy friendly) *pics*

Works as a snack, breakfast if topped with greek yogurt/cottage cheese, or a healthy dessert.

Ingredients:
2 large egg whites (70g)
2/3cup of pumpkin puree (170g)
dash of salt
1/4 tsp cinnamon
1/2 tsp pumpkin pie spice
Sweetener to taste

Directions:

1.Beat the egg whites in a bowl until frothy.

2.Add in all other ingredients.

3.Fold gently until incorporated.

4. Microwave for 2minutes.

5. Stir all the cooked parts into the uncooked parts, till evenly combined.

6. Microwave for 3 more minutes. And DONE.

Variations add in some unsweetened coconut, chocolate chips, or blueberries in step 5. (I have tried all variations and they are bloody delicious)
