    And another: Pumpkin mini cheesecakes: 86 calories each, makes 12:

    8 oz. canned pumpkin (1 cup)
    4 oz. 1/3 less fat cream cheese (1/2 package)
    2 tablespoons brown sugar
    2 tablespoons white sugar
    1 egg
    pumpkin pie spice (I make my own: 1&1/2 teasp. cinnamon, 1/2 teasp. ginger, pinch nutmeg, pinch cloves)
    12 gingersnap cookies

    preheat oven to 325. place 12 cupcake liners in each muffin pan well. Place a gingersnap in each, flat side down. Mix all ingredients until very smooth. Spoon about 3 tablespoons batter on top of each gingersnap. Bake about 20 min. until set. Cool and refrigerate.

    Plain Mini Cheesecakes: makes 12

    12 vanilla wafers
    8 oz. neufchatel cream cheese, softened (low fat cream cheese, 1/3 less fat)
    ¼ cup sugar
    ½ teaspoon vanilla
    1 egg


    blend the cream cheese, sugar, vanilla, and egg until smooth. place 12 medium-sized muffin liners in a muffin pan. place a vanilla wafer in each liner (flat side down). distribute cream cheese mixture evenly among the 12 muffin cups, about a scant 1/4 cup batter in each. Bake at 325 for 25 minutes. Cool. Refridgerate. Can top each with a teaspoon of fruit preserves if desired (calories for preserves are not included.)

    Nutrition:Per Serving: 87 calories each, carbs: 8, fat: 5, protein: 2, sodium: 100, calcium: 2


    Variation: Spiced mini cheesecakes: makes 12.

    Instead of vanilla wafers, use a ginger snap in each muffin liner. Add 1/2 teaspoon each of cinnamon and ground ginger and a pinch of nutmeg to same batter. Bake as above for plain minis. When cool refridgerate. Can top each with a teaspoon of fruit preserves, maybe peach or orange to go with the ginger. Calories for preserves not included in the total.

    Nutrition per serving: 100 calories each, carbs: 11, fat: 5, protein: 2, sodium: 133, calcium: 2


    ***Can lighten this recipe up to make 12 plain minis at 65 calories each by using 4 oz. (1/2 of a package) 1/3 less fat cream cheese and 4 oz (1/2 cup) plain greek yogurt. Make as above for plain minis.

    I must have done something wrong... The wafers are way too small for regular muffin cups, so I used minis, but that's going to make 15 (I used truvia so 60 calories each), and the wafers take 30% of the cup.

    I guess we'll see how it turns out...

    The regular vanilla wafers I used were also smaller than my muffin cups but they were enough to give them a base. I think vanilla wafers' size has shrunk the past few years (like so many other items!)
